Rocky Mountain Raceways hosts upwards of 50 high end catering events every summer from April through October. The Rock Club is the VIP area for the race track This is where many sponsors’ of the track dine in air-conditioned comfort There are two additional sponsor serving areas that are used

SLCC has a fine culinary arts program They produce many fine chefs There is currently a limited program in place for hands on training All future chefs need to learn all aspects of the business including catering

Perhaps we could join forces… RMR can cater, but lacks qualified personnel RMR has a pretty decent kitchen SLCC students could get ‘hands-on’ experience RMR could budget for and hire some interns

RMR WouldSLCC Students Would Provide experience Mentor Train future chefs Provide cooking facilities Involve students in purchasing procedures Learn menu design Learn pricing Learn staffing Gain experience Have fun

Who Would Benefit and How? RMRSLCC Get a new exciting catering team Increased exposure for sponsors Budget Friendly Menus Increase Food Purchase Volume Gain knowledge of catering Increased exposure to potential employers Knowledge and experience Earn some cash for school

Hurdles, there will be hurdles RMR Management must be sold!! SLCC Students must be convinced They have done the same thing for a very long time They all think they know all there is to know about food Might look down on working at a racetrack Is this really fine dining? (Yes, to the patrons it is)
