 “Asia”= Used by ancient Greeks to describe the civilizations east of their empire.  Agriculture ◦ Rice ◦ Mango, Papaya, and Pineapple.  Forestry & Fishing ◦ China, Indonesia, and Malaysia make up ½ of the forested lands in Asia.

 Southwest ◦ Countries of India, Sir Lanka, Pakistan, Burma ◦ Ingredients: hot peppers, black pepper, cloves, other strong spices, ghee (a butter oil), milk, chapati, and beans. Curry with a yogurt base  Northeast ◦ Countries of China, Korea, Japan ◦ Ingredients: emphasize fats, oils, and sauces vinegar and garlic. Dishes are relatively oily  Southeast ◦ Countries of Thailand, Laos, Cambodia, Viet Nam, Indonesia, Malaysia, Singapore, Brunei ◦ Ingredients: fish sauce, galangal, lemon grass, and tamarind, chilies.
