İngredients 2 cups sifted all- purpose flour 1 tablespoo n baking powder 1 teaspoon salt 2/3 cup sugar 1/4 cup shortening 1/4 cup butter 2 teaspoons greted orange peel 2 eggs, beater 2/3 cup milk 1/2 cup chapped raisins Raisin filling
½ cup peanut butter 2 tablespoons brown sugar ¼ cup coarsely chopped raisins 1 tablespoons melted butter
Sift together the sifted flour, baking powder, salt and sugar. Cut in shortening and butter until mixture resembles meal. Add grated orange peel. Add beaten eggs, milk and ½ cup chapped raisins. Stir just until blended. Spoon into generously greased large muffin cups or 5-ounce custard cups.Fill cups about 2/3 full.
Blend together the filling ingrediens:heat slighly to softer over low heat or in microwave.Drop o spoonful of filling on each coffee cake ;swirl through the botter with a knife.Bake at 250,20 to 25 minutes.Serve hot.
