Key Quotations “I always go to the underground canteen to have the meal, and most of the dishes there are ordered immediately. So most time I don’t have the chance to have a look at the appearance of the dishes I ordered.” -- Zhou Jiayi

Environment of the canteen: There are also half of interviewees who think it important, and they think highly of it as well. Service: Interviewees think everyone have moods sometimes, although their bad attitudes can sometimes affect them, they just understand them. (I really think our interviewees are so kind! ) The extent of crowd : The interviewees don’t like to be packed among the crowd. But if the place is too deserted, it can mean that the food there is not so good. Customs: This is an important factor in my view. As there are 56 nationalities in China, some especially people of the Hui nationality don’t eat pork. Thus we have a Muslims’ canteen to respect the minorities like them. It’s important to the unity of our nation.

Interview Stage Ⅱ “It’s the takeout and the delicacy street that give us more choice of food. Sometimes we can have enough of the food in canteen, and sometimes canteen can be crowded. The takeout and restaurants outside the campus not only can release the pressure of the canteen, but also can provide more delicious food for us students. ” -- Yang Qianyu Maybe the variety of food cannot satisfy consumers in the present case.

Relative influence index(ranging from 0-4) of the factors --- queue length also matters much and hygiene can’t be ignored, too

Chart1: The first chart reflects the factors have influence on students’ choice of dishes. Based on our replies, I worked out the Relative influence index of all factors. As we can see, taste is the most important factor. But to my surprise, the length of the queue and the hygiene conditions matters even more than price, while others’ comments have the least influence on us students.

Which part of the school’s canteen do you prefer? --- underground floor of east canteen is the most preferred place

Chart2: This chart reflects which part of the school’s canteen is the most popular. We can see that the popularity of the underground floor is much more than others because it remains open for 12hs, which is the longest among all, and it has the richest variety of dishes which means it can satisfy more students’ tastes. What’s more, the queue can remain short even in the rush hours and the hygiene condition is always good.

how many can accept the present price? --- most of us can accept the price, but not for congee and meat diet (N=44)

Chart3: This chart is about the price issues. The numbers 1-9 stands for nine different dishes of five categories in our canteen. We can see most of our informants can accept the present price of staple food, vegetable dishes and mixed dishes, but it seems that many of those can’t accept the present price of meet diet and congee.

Which meal do you usually have in our canteen? --- lunch is the most popular, but supper is different

Chart4: This chart is about what meal we will eat at the students’ canteen. We can see that most of us won’t have breakfast at canteen because many get up too late. And around noon, we all rush to canteen to have lunch because of the convenience. But in the evening, more than half of the female students don’t have supper at all in order to lose weight while male students all tend to enjoy their supper at canteen.

Conclusion --- How can we improve the popularity of our canteen? Improve variety and service Adjust the price of congee and meat diet Adjust the ingredients according to demands

Conclusion --- How can we improve the popularity of our canteen? First, canteens should provide more choice to students to satisfy more different kinds of tastes, also, canteens should improve their efficiency of their service in order to shorten the queue. Besides, canteens should open longer and improve their hygiene conditions. Second, canteens should cut down the price of meat diet and congee in order to increase their popularity and it can also increase the total revenue because we find the elasticity of congee and meat diet is big at present price. Third, we should design different types of food for different meals, for example, if their dishes for supper contain less fatty meat, more female students will go to the canteen to have their dinner.

Recommendations and potentials Literature Data Gathering Approach Sampling

Recommendations and potentials We should refer to literature and find out how similar researches are carried out so that we can improve the process of our own research. If time permits, we can conduct the interview and questionnaire part alternatively, just like a circulation, to make the data more precise. When making up the questionnaire, we must make sure the informants have enough knowledge to answer the questions. We can enlarge the range of the informants. We can conduct quota sampling to make our conclusion more convincing. We can investigate the satisfaction rate of some other factors of each canteen. We can divide the price in our questionnaire into smaller intervals to draw demand-price curve of the dishes.
