SERVICE TRAINING Hunger Games October 4, 2014

The Vision We want to take our guests to the capitol before the 74 th Annual Hunger Games has taken place! We will have interviews with Katniss and Peeta, a parade of tributes, and clips from the previous years of the Hunger Games!

1 st Course Dandelion Salad Pecans, Dried Cherries, Pears, Goat Cheese Allergies to be aware of: Nuts

2 nd Course Seared Trout over Beet Puree Veg Option: Apple, Pear, and Arugula over Beet Puree Allergies to be aware of: None

3 rd Course Katniss’ Favorite Lamb Chops Veg Option: Portobello Mushroom Wellington Allergies to be aware of: None

4 th Course Dark Chocolate Crème Brulee Vegan/Dairy Free Option Night Lock Berries

Coffee/ Tea Service Begins right after dessert is served Head Server & Server 2 Serve Decaf or Regular Coffee and Mint Tea to the first table in their section Server 3 & 4 Server Decaf or Regular Coffee and Mint Tea to the second table in their section So on and so on… Beverage Servers are to take trays of creamer to each table, start in front and work to back

How to Serve Hold one plate in each hand Walk to 1 st position at table Wait for Head Server’s queue and then all serves place the first plate  take one step to the left to get to 2 nd position  wait for Head Server’s queue and then all servers place their second plate

Always: LOWER LEFT When serving plates, you always lower the plates on the left side of the guest RAISE RIGHT When clearing plates, you always raise the plates on the right side of the guest

Things to Remember: Always stay in the proper order Never leave the satellite kitchen without your entire team (Never return without being in order) Always have one plate in each hand Place the left plate first, and the right plate second When exiting the dining room, NEVER exit through the satellite kitchen entrances Exit through the side doors

Things to remember: Serve the table closest to the stage first ALWAYS SMILE

Clearing Plates Same style of service All plates cleared at the same time Follow head server to table Wait for queue to pull first plate Take one step to the left, to get to second position Wait for queue to pull second plate Follow head server around the table and out of the dining room
