Tourist : This salad is very delicious. What is it called? Guide : This is called ‘Som tam’, a very popular cold salad made with grated green papaya. Originally, It was a northeastern Thai dish, but now it is available throughout Thailand.

Tourist : I love it. How do you make it ? Guide : It ’s very easy. Do you want to write down the recipe

Tourist : Yes, I do Guide : Well, you need one large green papaya, four cloves of garlic, a few fresh chillies, some string beans, four small tomatoes, fist sauce, lemon juice,a table spoon of palm sugar, tamari liquid, and some dried shrimps.

Tourist : All right. Add then what do you do ? Guide : Well, first you peel and coarsely grate the papaya. Then, cut up the string beans into I inch pieces. Cut the tomatoes into halves. Then, put the garlic into a mortar and lightly pound it with a pestle. After that, add the chillies and pound them.

Guide : Then, add the string beans. Pound them again lightly. Add the grated papaya and the tomatoes. Pound and mix well. Add fish sauce, lemon juice, palm sugar, tamarind liquid and the dried shrimps and mix well. Then with fresh vegetables, such as cabbages, string beans, and water spinach.
