WHAT IS EXTRA VIRGIN? EVOO Standards: 1) Only from the fruit (no pits) 2) No processing 3) Must be “cold-pressed” Under 80 degrees Farenheight 4) Acidity level must be below 0.5% 5) Oil must be free of defects from testers

BENEFITS OF OLIVE OIL 1) The phytonutrient in olive oil, oleocanthal, mimics the effect of ibuprofen in reducing inflammation, which can decrease the risk of breast cancer and its recurrence. 2) Squalene and lignans are among the other olive oil components being studied for their possible effects on cancer. 3) Olive oil lowers the levels of total blood cholesterol. 4) Olive oil is rich in antioxidants, especially vitamin E, long thought to minimize cancer risk.

WHAT YOU CAN DO? 1) Read the back of the label Look for an expiration date (2 years after its labeled) Harvest Date – you only want oil picked within 2 years Bottle color – clear bottles destroy the quality of oil

WHAT CAN YOU DO Real olive oil – the good stuff – will be powerful and peppery and it will catch in your throat. You may cough, your eyes may water. But these are in fact good indications that what you’re tasting – finally! – is authentic.
