Candy Melts Each person is responsible for handing in 2 filled candies

What are candy melts? Imitation chocolate that has shortening instead of cocoa butter they do not need to be tempered

Making a filled chocolate Choose a deep candy mold Put your name on it

Carefully melt the chocolate ( not all of the bag!)

Making a filled chocolate Put a small amount of chocolate in the bottom of the candy mold

. Using a spatula or the back of a spoon, push the chocolate up onto the sides of the mold to form a shell

Place the mold in the refrigerator

. When chocolate is set, put a small amount of filling (caramel, butter cream or coconut cream )in the mold Make sure the filling does not go up over the edge of the mold!

. Pour chocolate over top of the filling and smooth back with a hot icing spatula

Set in refrigerator Press chocolate out of the mold and trim edges with a paring knife Take a picture with your ipad and show me for a grade

How will it be graded? Smooth back- 3 points Clean sides- 2 points Over-all- 3 points

What if… my candy breaks when I’m taking it out of the mold eat it and make another one My chocolate is over cooked or dried out ( this may be because you added too much food coloring) try adding a small amount of vegetable shortening Someone steals my candy find it, if you put it in your bin at the end of the period, someone in the class has it I run out of chocolate? you did not use it wisely, hopefully there is more in the front of the room, if not maybe someone will give you some
