Physical processes have two main objectives: to reduce the size of the food and to facilitate the substances go down through the digestive tract. Chemical processes are in charge of transforming food into nutrients thanks to different substances that digestive juices contain.

It takes place in the small intestine where the nutrients obtained thanks to digestion, are absorbed to be used by cells to carry out the metabolism. The absorption of simple glucids, fatty acids and aminoacids is carried out through intestinal villi and protusions (microvilli, specific cells of the intestine). From these cells the nutrients reach the blood vessels and will be transported all over the body. The large intestine absorbs most water, mineral salts and vitamins.

It appears quickly in the blood and it goes quickly to the muscles. Bread or potatoes have starch ( a polysaccharide) and needs to be digested to release the molecules of glucose. It will take a lot of time to have the glucose available for the muscles.
