APRIL 13-16, 2016 ERGONOMICS IN THE KITCHEN Recipes for Safety Success THESE MATERIALS HAVE BEEN PREPARED BY CHUCK CLEMENTE - ASCIP THEY HAVE NOT BEEN REVIEWED BY STATE CASBO FOR APPROVAL, SO THEREFORE ARE NOT AN OFFICIAL STATEMENT OF CASBO

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 2 Our key topics for today… What are common hazards in the Kitchen? Using Ergonomics in the Kitchen Musculoskeletal Disorders 101 Risk Factors that Contribute to MSD’s Taking Action – Using Ergonomics to Improve the Workplace

9 Our Musculoskeletal System

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 10 Musculoskeletal Disorders (MSD) 101 MSDs are not the result of a particular event They are Chronic injuries built up over time. Repetitive tasks, working in sustained or awkward postures, heavy work, forceful excretions all can result in injuries to… Muscles, Nerves, Tendons, Ligaments, Joints Cartilage & Spinal Discs May start as microtraumas Take weeks, months or years to develop Vary in symptoms from person to person

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 11 Musculoskeletal Disorders Symptoms Pain from movement, pressure or exposure to cold or vibration Change in skin color from exposure to cold or vibration Numbness or tingling in the legs, arms, hands, or fingers Decreased range of motion in the joints Decreased grip strength Swelling of a joint or part of the arm, hand, finger, or leg Fatigue or difficulty in keeping up with performance requirements

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 12 Musculoskeletal Disorders Tendinitis – Inflammation or irritation of the Tendon Caused by repetitive minor impacts to the affected area Carpal Tunnel Syndrome – pinched median nerve in the wrist Caused be repeated compression of the nerve bundle Thoracic Outlet Syndrome – compression of nerves and/or blood vessels Caused by drooping shoulders or holding your head in a hanging forward position Sciatica– Pain radiating down the leg from the lower back Caused by bulging discs and irritation of the lower spine

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 13 What makes a Healthy Musculoskeletal System?

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 14 Musculoskeletal Disorders

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 15 Taking Action – Using Ergonomics Awareness Forceful Exertion- carrying or lifting heavy loads Ex: Lifting heavy bags of flour, mixing bowls or cans of food

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 16 Lifting, lowering and carrying loads Before lifting, test the load to determine if it is light enough to lift. Separate heavy loads into lighter ones or get help. Purchase items in lighter weight packages Put wheels on containers or use dolllies Avoid reaching below mid-thigh height and above the shoulders Objects in your power zone are easier to lift Place or store heavy items at mid-body height to make retrieval easier

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 17 To properly lift an object.. Bend with your knees and let your legs do the work Activate your core muscles (abs) Maintain the Natural Inward Curve (low back) Keep objects close to your body Keep your feet shoulder width apart Do not twist when lifting, pointing your toes in the direction of travel Never use fast or jerky movements when lifting

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 18 Using a cart...always Push! Push whenever possible. Pushing is safer than pulling. Always use two hands when pushing or pulling. Do not pull with one arm extended behind your body. Ensure that good visibility is possible without awkward motions such as twisting or stretching. Ensure that handles are between waist & shoulder height. Keep your upper arms against your rib cage with your elbows in. Keep your feet shoulder width apart. Take small steps when turning corners to avoid twisting your back

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 19 Scissor lifts can aid in transport and save your back!

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 20 Carrying handles…

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 21 Awkward Postures – Posture is Primary! KEY POINTS Awkward postures have an increased risk of injury. Repetitions of a single task with an awkward posture are associated with ergonomic stress and greater chances of injury. Always move your body closer to an object or move is closer to you. Keep your elbows as close to your body as possible. Use tools or utensils that are designed to keep your wrists straight.

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 22 Preventing Fatigue from Static Postures KEY POINTS Limit standing to 2 hour increments (avoid 5 hours or more static standing) Allow for at least 30 minutes non-static standing rest periods Allow workers the opportunity to alternate between sitting and standing Provide anti-fatigue mats Provide Sit/stand stools Install footrests under workstations. Provide shoes with cushioning soles and insoles

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 23 Possible Solutions with Ergonomic Designs

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 24 Some last minute Ergo tips Use Tilted boxes Use tilted bins or boxes to reduce the reach Use Power grip for strength The smaller the hand grip…the less power you have. Power grips around cylindrical handles and fingers should surround more than half of the handle (optimal is 1 1/4” to 2 “) Precision grips (pinched grips between fingers & thumb) are 20% less than a power grip.

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 25 Some last minute Ergo tips Alternate heavy tasks with light tasks. Provide variety in jobs to eliminate or reduce repetition (i.e., overuse of the same muscle groups). Adjust work schedules, work pace, or work practices. Provide recovery time (e.g., short rest breaks). Modify work practices so that workers perform work within their power zone (i.e., above the knees, below the shoulders, and close to the body). Rotate workers through jobs that use different muscles, body parts, or postures.

2016 CASBO ANNUAL CONFERENCE & CALIFORNIA SCHOOL BUSINESS EXPO 26 Thank you for your time!!
