D ISASTER F OOD S AFETY F OOD S TORAGE F OLLOWING D ISASTERS G ENERIC MESSAGES Time/temperature combination o Thermometers are the most important tool o Dry ice o Coolers (easier to keep cold) o Don’t open the fridge/freezer o Un-opened fridge will stay cold for about 4 hrs (add 2 hrs for food) o Freezer will stay below 41°F for about 48 hours o Food can be refrozen if it contains ice crystals, or is 41°F or below

D ISASTER F OOD S AFETY F OOD S TORAGE F OLLOWING D ISASTERS G ENERIC MESSAGES Flooding o Thoroughly wash all metal pans, ceramic dishes and utensils that came in contact with flood water with soapy water o Sanitize by boiling them in clean water or by immersing them for 15 minutes in a solution of 1 tablespoon of unscented, liquid chlorine bleach per gallon of drinking water.

D ISASTER F OOD S AFETY F OOD S TORAGE F OLLOWING D ISASTERS G ENERIC MESSAGES Flooding o Undamaged, commercially prepared foods in all-metal cans and retort pouches (for example, flexible, shelf-stable juice or seafood pouches) can be saved. o Remove labels, wash, sanitize (as per pots), air dry o Use bottled water that has not been exposed to flood waters. If bottled water is not available, tap water can be boiled for safety.

D ISASTER F OOD S AFETY F OOD S TORAGE F OLLOWING D ISASTERS G ARDENS CONTINUED Plants where fruits have set (tomatoes) or where flowers are evident (broccoli/cauliflower) at the time of flooding present an undefined risk Underground vegetables such as beets, carrots and potatoes that are still early in their growth (at least four to eight weeks from harvest) should be safe if allowed to grow to maturity. Also, you should not can flooded garden produce
