3 Typical Duties Formulates menu for all kids esp. those w/ special needs Plans & Analyzes menus for entire school district to ensure that USDA meal pattern and nutritional requirements are met. Maintains purchasing system w/ the USDA & other state purchasing guidelines. Supervises & Trains personnel Manages Payroll & Handles Union Issues & Grievances Scheduling meetings w/Food Vendors & Employees & School Nurses and School Principals

5 Typical Work Schedule Working Day: 8:30 am – 4:30 pm. “Every day is different” One day I can get hit with a lot of different issues: Union Issues or Grievances Business Issues - Purchase Orders, Payrolls, Ordering wrong food items Warehouse Issues- items not being delivered on time School Issues- dealing w/ school Principals & Nurses for student’s food allergy (Field staff/managers are usually sent out to resolve the school issues) Paper work – “Red Tape” – State required paper work – has to meet the deadlines !

7 Advancement Opportunities As a Food Service Director I am at the pinnacle of what I can do in terms of school food service First, you start as a Field Manager and worked my way up and then I became an assistant director Different classification for managers different workers In my office you have a field manger and a operation manager Every district is different in terms of their level of their administration and how they are set up & operate under those guidelines But you can also go working in the healthcare industry, restaurants, corporate, and schools, etc.

9 Salary According the occupational handbook (BLS) of 2009, the salary varies according to where one is employed and which state they are practicing in. The places with the highest levels of employment in this occupation: Limited Service Eating Places, Special food services, traveler accommodation, elementary & secondary schools. Dave B indicated that the average salary in this field is $115,000. – This figure varies on years of experience & education background – In smaller district they make less in larger and poorer Districts like Jersey City & Newark Food Directors make more money.

10 Education/Mandatory Classes All General Nutrition classes - When hiring a food service director, many employers look at both the practical experience and the educational background of each candidate. - Larger businesses such as hotel chains, resorts, and university cafeterias tend to go with candidates who have some type of formal education in the hospitality industry, such as a two or four year degree in food service management. - Even smaller businesses such as local restaurants and high school cafeterias often prefer candidates with at least some formal training. This is because most institutions that offer hospitality education programs require that students serve an internship before they are eligible for graduation. Requires a bachelor's degree with at least 7 years of experience in the field. Familiar with a variety of the field's concepts, practices, and procedures

12 What makes one want to become a Food Service director? The part of it was the way I was brought up. The path of life that took me this direction. – I like cooking – I like the food – I like the business aspect: “Believe it or not I like to work with the numbers” Overall a great combination of all the things I love to engage in. You must have passion to do this job!

13 Is this a man/ woman dominated field? HOORAY!! Over the years, this career has grown into a women dominated field. This is due to the fact that women nowadays major in being RD’s and have a degree. Therefore, get this position quicker because of their degree & extensive nutrition background.

14 Commodities USDA commodities play a big role in expenses & profit would be lost if bought commercially-based food. Varies according to what district you work for. (ie. $600,000 is his commodity for Paterson Public School District) Yearly budget approximately 12 millions!
