INGREDIANTS o 4 ½ Cups (560g) plain/all-purpose flour,sifted o 3 teaspoons baking powder o Pinch of salt o 1 ½ cups (300g) sugar o 300g/10 oz butter or margarine,softened o 3 eggs o 3 teaspoons vanila essence/extract o 1 ¾ cups (415 ml) milk

Step 1 o Preheat the oven to 190⁰c /375⁰F

Step 2 o Sift together the flour,baking powder and salt.Put to one side.

Step 3 o Beat together the sugar,butter,eggs and vanilla.Beat until light and fluffy.(if using an electric mixer,use high speed).

Step 4 o Combine the flour and liquid mixtures.Beat until the mixture is smooth.

Step 5 o Pour the butter into the prepared baking pan.Smooth over using a spatula.

Step 6 o Bake for 25-30 minutes,or until the centre springs back when pressed.

Step 7 o Remove from oven and leave to cooling rack,still in the pan.

Step 8 o Place a topping of choice on the cooled cake.Some ideas include : - plain icing - Icing + glazed cherries - Icing + berries - Icing + citrus peel - Icing + sprinkles - jam and chocolate piped lines - Lemon curd and cream
