3 What is a Grain?  All plants in the grass family including wheat, corn, rice, oats, rye, barley, buckwheat, and millet.

4  Grains produce many small, separate dry fruits called kernels.

5 Grains are made up of three different parts: 1. Bran 2. Endosperm 3. Germ

6 Nutrients in Grains  They include carbohydrates, protein, fiber, B and E vitamins, iron, zinc, and other phytochemicals. Each part of the kernel contains different nutrients.

7 WHOLE GRAIN PRODUCTS CContain the entire kernel so it contains most of the original nutrients.

9 Rice  Long Grain  Medium grain  Short grain

10 Different Types of Rice WWhite BBrown WWild

11 Different Types of Grains CORN OATS BARLEY BUCKWHEAT COUSCOUSMILLET RYE

12 Pasta  Italian word meaning “paste”, or dough made from flour and water Pasta includes Macaroni products and Noodles

13 Cereal  Usually have sugar, fruit, nuts and other flavorings added.  2 types: 1.Ready-to-eat 2.Those that need to cooked such as Instant or quick- cooking

14 Bread  Leavened Bread  Flat Bread  Whole Wheat  Wheat

15 Buying Grains CChoose whole grains as much as possible. LLook for low in fat, sugar, and sodium

16 Storing Grains  Rice/Pastas  Breads  Cereals

17 Cooking Grains  Pasta- Boil until al dente (firm to bite)  Rice  Follow directions on packages for all grain products. They may vary depending upon the size and variety
