Unit 1 : Hospitality Orientation Hospitality and Careers Guest Service Professionalism Safety and Security The Lodging Management Program is designed to help participant s form a foundation of knowledge about lodging management. It then presents topics in such a way that participant s are able to build on similar knowledge and walk away with a strong grasp of the lodging industry. The first unit concentrates on an overview of the industry. It explains how the industry is organized, the importance of service, and the careers and career paths available to participant s in lodging. The second unit concentrates on the guest and caring for the guest in the front office. It covers everything from the equipment needed to care for the guest to the procedures and sales techniques used. The third unit concentrates on caring for the most expensive asset of the hotel: the rooms. As no manager can succeed without knowledge of rooms and their care, the unit covers the management of housekeeping staff, controlling inventory, caring for the room, managing an on-premises laundry, and selecting and maintaining carpets. Finally, the unit ends by addressing important safety, chemical, and security management concerns.

Textbook Workbook Skills Competency Checklist Scantron for final exam This is a list of the participant components for the START program. At this point, have the teachers take out the Sample Materials that you requested they bring with them. The purpose of this portion of the presentation is to make the teachers familiar with all the resources they have by walking them through a chapter. Each component will be described in detail in the slides that follow.

8 Student Textbook 18 Chapters Each chapter has: Learning Objectives
Interesting Lodging Facts Charts, Forms, and Exhibits Apply Your Learning Section Glossary of Terms Index Walk teachers through a chapter of the student textbook and show them all of the features below and highlight how the features facilitate learning. The textbook chapters are broken into short, manageable sections that have several helpful features: Industry Profiles reinforce the professional nature of the course and illustrates the many career paths that are open to them. Learning Objectives highlight key concepts to help students better grasp the material. These objectives are directly tied to the industry-driven competencies. Key Terms are highlighted in blue boldface where defined in the text to help build vocabulary skills. Interesting Lodging Facts are highlighted with a pineapple and pique student interest in hospitality. Under the Gavel features acquaint students with important points of law that govern lodging operations. Charts, Forms, and Exhibits facilitate visual learning. Apply Your Learnings at the end of each section include review questions that can be assigned as homework or completed as a classroom activity. Quick Hits outline the key points throughout the chapter.

9 Student Workbook Building Your Vocabulary Compute This
Chapters have three activities per section from the following: Building Your Vocabulary Compute This Do You Remember? Case Study Add It Up Write Right Putting the Pieces Together Scantron sheet to administer exam The participant Workbook is NOT included in the Teacher Resource kit and will need to be purchased separately for each participant . The participant Workbook is a softbound book full of activities for participant s to use in class. There are three activities for each section. The activities facilitate the integration of such core skills as reading, writing, and math into the lodging curriculum. Building Your Vocabulary are word games and fill-in-the blank exercises that review key concepts and words from the section. Compute This activities are computer or Internet activities that give participant s practice in practical hospitality applications. Do You Remember? Tests the participant s’ comprehension of the section. Case Studies are condensed from industry-produced case studies that challenge participant s to apply the section competencies to a real-life situation. Add It Up exercises apply math skills to practical applications such as calculating occupancy ratios or establishing par inventory levels. Write Right encourages participant s to practice business writing skills by producing memos, letters, purchase orders, marketing pieces, and training materials. Putting the Pieces Together provides participant s with the opportunity to practice several core skills to complete a lodging activity.

10 Skills Competency Checklist
Represents transferable skills Teachers/Employers sign off on skills as students master them Allows students to build portfolio of skills to showcase to potential employers If teachers do not have workbooks, have them reference the START Toolkit. Reinforce that workbooks need to be purchased in order for every participant for participant s to receive their participant Workplace Competency Checklist. The participant Workplace Competency Checklist reflects what lodging employers have identified as being integral to success in the hospitality industry. Through the course of the program, participant s will have the competencies initialed by their mentors as they master them. Satisfactorily completing the participant Workplace Competency Checklist is an important START work experience requirement. The checklists are grouped into three parts according to department. participant s must obtain a score of 2 or higher on all Work Habits. They must score a 2 or higher on at least 65% of the competencies in at least two positions in year one and two.

Teacher Resources Set Lesson Plans Power Points/Transparency Masters Assessments Workbook - Teacher’s Edition DVDs (sold separately) This is a list of the teacher components for the START program. The teacher’s resources will be described in detail in the slides that follow.

12 Lesson Plans Discussion outline for each chapter section
Learning objectives and lists of key concepts Learning activities Key points Guide to appropriate support materials Answers to: Apply Your Learning Questions Walk teachers through a chapter of the Lesson Plans to highlight the support provided. Lesson Plans provide teachers with a detailed discussion outline for each section of the participant textbook, highlighting key points and learning activities that will enhance teaching of the material. Lesson Plans also provide teachers with the learning objectives and key terms as well as the answers to the Apply Your Learnings for each section. Supporting materials, such as transparencies, videos, and activities are listed alongside the appropriate learning activity so teachers know when to use them.

13 Power Points/Transparency Masters
Provides a guide to classroom discussions and highlight key textbook information Provides answers to transparency questions *Walk teachers through a chapter of Transparency Masters. Transparency Masters can be used for display and distribution as classroom transparencies, posters, or handouts. These masters highlight key textbook information and serve to guide classroom discussion. These transparency masters may be photocopied for classroom use. The transparency masters are also available on EI’s Website in PowerPoint format.

14 Assessments Provides quiz/test sections and answer key
Provides chapter test and answer key Final exam review guide Provides information for ordering the START final exam *Walk teachers through a chapter of assessments plus show them where the answer key is. Assessments supply teachers with several options to gauge and assess participant progress. Assessments may be photocopied for classroom use. Section Quizzes consist of 10 short-answer and multiple-choice questions. Chapter Tests have 25 questions and are all multiple-choice questions. The Chapter Tests can be used to help participant s prepare for the final exams. Answer Keys for all of the quizzes and tests are also provided in Assessments. The Assessments book includes a final exam review guide and ordering information for the START final exam.

15 Testing Procedures Instructors must ensure that exams are ordered in a timely manner. Instructor may administer the START exam.

16 Workbook— Teacher’s Edition
Answer key for Student Workbook Additional learning activities for every chapter, such as: Ideas for guest speakers Group projects Role play and case studies Research assignments Activities *You may have already walked through this book when you were talking about the participant Workbook. Show them the additional activities if you have not already done so. Workbook—Teacher’s Edition provides answer keys for all of the activities found in the participant Workbook. The Workbook—Teacher’s Edition also recommends several additional learning activities for each chapter that can be used in the classroom to reinforce important concepts and information. These additional activities include ideas for presentations, games, field trips, research assignments, group projects, guest speakers, experiments, identification, and role-play. Many of the activities are designed to appeal to different learning styles--some are visual-based, others are hands-on, and still others involve auditory learning.

17 Student Recognition Certificate of Achievement awarded for passing final examination Students must score 70% or higher on the final exam Voucher for front line-level certification upon passing final exam (Certification awarded after work requirement is met) An EI certificate will be issued upon successful completion of each START exam. Signed employment agreement with participant , parent, school, and employer participant follows agreed-upon guidelines for conduct and attendance at school and work participant completes participant Workplace Competency Checklist satisfactorily The yearly final exams include 50 multiple-choice questions that assess retention of key concepts. Final exam procedures are available in the Toolkit and in the Assessments book. Teachers will receive an exam master they can use for tests and retests. Scantron answer sheets are returned to the Educational Institute. Passing grade receives certificate from the Educational Institute of the American Hotel & Motel Association. participant s may retest. The first retake is free, all subsequent retakes are $25. Certificate of Completion awarded to participant s that score 70% or higher on the final exam each year. participant s that score 90 or higher receive certificate “with Honors”. A national “Certification” from the American Hotel & Lodging Educational Institute. Our Certified Rooms Division Specialist (CRDS) designation is currently only available for Lodging Management participant s. A EI School-to-Career Certificate for participant s who successfully complete work requirement, completed competency book and pass both final exams.

18 Professional Certification
Students who successfully complete the START curriculum and pass the final exam will receive a voucher waiving the fees for a Hospitality Skills Certification. Certification Options for START Students Include: Certified Guest Service Gold Professional Certified Restaurant Server Certified Front Desk Representative Certified Guestroom Attendant Certified Maintenance Employee They can redeem their voucher once they have been hired in the qualifying position in the industry.
