5 ‘ Cockle Gratin’ How Do We Cook and Shell Cockles? 1. Cockles live in mud flat, so they contain mud in and on their shells. To get rid of the mud, rub the cockles against one another and rinse several times in clean water. Then soak them in salted water. 2. Put the cockles in a big pot with water and boil them. When the water starts to boil, turn down the heat and stir occasionally to cook them evenly. (Well-cooked cockle flesh is plump, glossy, and juicy.)

15 ‘Cockle Gratin’ 1.Clean the cockles and soak them in salted water. 2. Preheat the oven to 170 ℃. 3. Boil the cockles for about 5 min. Keep stirring. Cook them down. 4. Cut the bell peppers and onions into 2x2x2cm triangles. 5. Slice the garlic 0.3cm thin. 6. Shell the cockles and rinse them a few times. 7. Boil the noodles for 2 min. Rinse them with cold water and drain them. 8. Heat the pan and drizzle the olive oil. Stir-fry the garlic slices. 9. When the garlic turns brown, add the onion. Keep stir-frying.

16 ‘Cockle Gratin’ 10. When the onion softens, add the bell peppers. Keep stir-frying. 11. Add the cockles and noodles. Keep stir-frying. 12. Add the milk and the stock powder and simmer for 2 min. 13. Place 12 and shredded mozzarella cheese into the gratin bowl in 2-3 layers. Top it with the shredded mozzarella cheese. 14. Bake 13 in the oven for 10 min.
