3 Location The winery is located in the heart of the famous Prosecco vineyards in the beautiful Conegliano hills, about 40 miles from Venice. A complex hill system shaped by ancient glaciers, not far from the left bank of the river Piave Equidistant from the Dolomites, which protect its northern flank, and the Adriatic, which keeps its climate gentle and temperate

4 Location Generous terrain, but difficult to cultivate. Vineyards grow on very steep slopes, culled from the hills centimeter by centimeter by the hard work of wine grape growers. The production zone includes 15 municipalities and extends over an area of approximately 18,000 hectares of agricultural land, 6100 of which are dedicated to wine grape growing. Vines are grown only on the south-facing part of the hills, at a height that may reach 500 meters.

6 History Zardetto has been a leader in sparkling wine for more than 40 years. One of the first companies to introduce and distribute Prosecco outside Italy. Continues to conquer the global market with a wide portfolio of high-quality products. Today, Zardetto Prosecco, which was known first in Milano, Bologna and Roma, can be found from New York to Santa Monica, and from Tokyo to Hong Kong.

7 Philosophy Prosecco at Zardetto is produced from carefully selected grapes grown on the finest hilltop vineyards, vinified in a state-of-the-art winery blending modern techniques and traditional practices, resulting in successful and highly acclaimed wines.

8 Owner Joined his father’s company in 1982 as chief winemaker ; sole owner since 1998. Lives in his home town of Conegliano; attended the prestigious enological school in Conegliano In 2002, he turned his efforts to the construction of a new winery that incorporates the most sophisticated technologies, a team of skilled and talented experts, and a strong partnership with grape growers.

12 What is Prosecco? Created from predominately Glera grapes (formerly known as Prosecco) in the northern Veneto, Prosecco is light, affordable, and fun. Sometimes combined with a small amount of Pinot Blanc or Pinot Grigio grapes, Prosecco is made using the Charmat method.

13 What is Prosecco? The Charmat method allows the wine to go through the second fermentation in pressurized tanks rather than in individual bottles. No turning the bottles every day as in Champagne. The shorter, tank fermentation is preferable for Prosecco because it preserves the freshness and the flavor of the grapes.

14 Prosecco: The Process Pressing Settling Vinification (1 st round); cold and slow— 15/20 days @ 68 F This is the base wine Blending of base wines “Prise de mousse”: 2 nd fermentation initiated by adding select yeast & sugar in tank under pressure (called “The Italian Method” here) Minimum of 30 days et allora, the bubbles form….

15 Prosecco Brut Treviso DOC 100% Glera The first fermentation takes place after a brief maceration, which enhances the typical citrus and tropical aromas of the Glera grapes. Offers fresh, fragrant aromas of peach, citrus and tropical fruits. Delicately soft and harmonious on the palate, Zardetto Prosecco is extremely versatile. Can be served as a sparkling aperitif or alongside a wide array of foods.

16 Zeta Conegliano Valdobbiadene Prosecco Superiore Dry DOCG 100% Glera Produced in limited quantity, this vintage- dated sparkling wine takes its name from the first letter of the Zardetto family name– "Zeta" in Italian. With an elegant and finely textured perlage, Zeta offers layered aromas of orange blossom, lemongrass, peach and tropical fruits. Can be served as an aperitif and also pairs very well with salty foods. Can also be served with traditional desserts like pastries and fruit tarts or simply by itself after dinner.

17 Brut Private Cuvée Vino Spumante Conegliano 30% Glera, 30% Chardonnay, 15% Moscato, 25% local grapes Fabio Zardetto has created his own personal Cuvée—a blend of Glera (the new name for the Prosecco grape) This sparkler expresses notes of pears, apples and peaches with a hint of wild flowers. Pairs perfectly with grilled fish, smoked trout, grilled vegetables, vegetarian salads and Asian cuisines, like spring rolls or chicken satay.

18 Tre Venti Conegliano Valdobbiadene Prosecco Superiore Rive di Ogliano Brut DOCG 100% Glera This new, limited edition, single vineyard Prosecco, is the result of Fabio Zardetto's never-ending research into the Prosecco DOCG world. The perfumes are delicate with hints of floral notes wisteria and acacia, and green apple, pear and citrus fruits. It is spicy yet refined and the palate the structure is elegant with firm acidity, velvety texture and a long, creamy finish. Serve with first courses such as elegantly sauced crab dishes or rich and salty tempuras.

19 Vino Spumante Rosé 100% Raboso Veronese After four decades of Prosecco experience, Fabio Zardetto decided to delve deeper into the world of bubbles by producing this unconventional sparkler. Elegant and expressive, this rosé presents a mesmerizing stream of steady bubbles all immersed in a lovely raspberry-pink color. It has fresh aromas of cherry and red currant with good acidity and a velvety smooth finish. This sparkling wine is a perfect companion for pool parties and informal barbeques.
