MAIN NUTRIENTS Carbohydrates (different sugars) Fat (glycerol and fatty acids) Protein (amino acids) Vitamins Minerals Water Roughage/dietary fibre (Ballaststoffe) Note: in German there are 3 main nutrients: fat, carbohydrates and protein. Vitamins, minerals, water and roughage are not seen as “Nährstoffe” in German!

OBJECTIVES Testing for lipids, proteins and carbohydrates in food Be able to conduct and document your experiments adequately Know the building blocks of lipids, proteins and carbohydrates

E XPERIMENTS Work in small groups of 3 Read instructions carefully before you begin! To document your work adequately write down your HYPOTHESIS in a table first. After conducting each experiment, write down the RESULTS and make a table for your CONCLUSIONS.

C ARBOHYDRATES Monosaccharide simple sugars: e.g. glucose, fructose (C 6 H 12 O 6 ) energy source in cells during cellular respiration build cell structures and other organic molecules within the cells Disaccharide composed of two monosaccharides joined together Sucrose (table sugar): one glucose and one fructose molecule

C ARBOHYDRATES Polysaccharide long chains of monosaccharides bond together starch: polysaccharide composed of long chains of glucose plants store excess glucose in the form of starch animals (and humans) store excess glucose in the form of glycogen in the liver and muscles cellulose: makes up the cell wall of plants
