3 Natural Mineral Water Officially recognized Microbiologically wholesome Originating in a well protected underground water deposit Emerging from a spring tapped at one or more natural or bore exits Characteristic mineral content and original purity The composition, temperature and other essential characteristics of NMW shall remain stable Limited treatment Particular extensive labelling

4 Spring water Intended to human consumption in its natural state and bottled at source No official recognition required No requirement on stability Treatment – limited as for natural mineral water Microbiological criteria – as for NMW, chemical – as for drinking water Labelling – mostly the same as for NMW except of analytical composition

11 Treatment of natural mineral water and spring water Separation of unstable elements (Fe, S compounds) by filtration or decanting, possibly proceeded by oxygenation, in so far as this treatment does not alter the composition of the water as regards essential composition Total or partial elimination of free carbon dioxide by physical methods Any disinfection treatment by whatever means is forbidden Separation of Fe, Mn, S compounds by treatment with ozone-enriched air (special conditions) Other approved treatment methods
