Corn silk (CS) or stigma maydis refers to the female flowers (Zea mays). CS has health benefit and has been traditionally used as the eastern local wisdom in Chinese medicine. Several researches reported constituents of CS such as proteins, lipid, ash, carbohydrate, total dietary fiber, minerals, flavonoids, tannins, phlobatannins, cardiac glycoside and steroids. However, CS is a waste from fresh consumption and processing. There are high possible prospect to create value-added product from such a waste from corn. The composition in CS depends on many factors i.e., variety, growing location, harvesting stage. Bioactives in corn silk are complex, not a single compound of phenolics. The antioxidant activity of CS could be free radical scavenging and reducing power, indicating various bioactives in CS. The CS of both coloured and baby-corn promised a high potential utilization as functional food. It is not only a waste utilisation transforming to value- added products.
