10   Tofu – comes from soy beans, like many soy products, it absorbs flavors from other foods easily.  Tempeh – is a pressed caked of fermented cooked soybeans mixed with grains. It is popular in Indonesian cooking.  Seitan – wheat gluten is used to make seitan. It’s made by simmering flour in a broth flavored with ginger.  Quorn – is made from the protein in mushrooms and shared a meaty texture. Quorn was developed in Great Britain in the 1970’s and is popular in Europe.
