Waxes are esters made of one Fatty Acid and one long chain alcohol Protective lipids found in the outer covers of Plants: leaves/stem – prevent waterloss Animals: waterproofing skin, fur and feathers

Fats and Oils Are Triglycerides/Triacylglycerols Esterification Rx of 1 Glycerol with 3 Fatty Acids 3 FA are a mix of saturated and unsaturated FA

Simple Naming of Fats Name: Glycerol tristearate Most detailed names we can do: - trilaureate, - trimyristate, -tripalmitate

Fats are solids at RT Ex: fats in meat, butter, cheese typically from an animal source Contain a higher amount of saturated Fatty Acids Called saturated fats

Oils are liquid at RT Ex: olive, canola, sunflower oil typically from a plant source (seeds/nuts) Contain a higher amount of cis- unsaturated/omega Fatty Acids Called unsaturated oils

Solid vs liquid why? Saturated Fats have a higher MP/BP they have higher Van de Waals Unsaturated oils have kinks: lower Van der Waals, lower MP/BP
