EZO GELİN SOUP

Ingredients 1 cup red lentil 3 tablespoons extra fine bulgur 3 tablespoons rice 1 medium sized onion (diced) 1 tablespoon tomato paste ½ tablespoon red pepper paste 4 tablespoons olive oil 10 cups hot water A pinch black pepper A pinch red pepper A pinch salt A pinch mint A pinch chili flake 1 tablespoon butter

PREPARATION Pour the olive oil and add the diced onion to the pot and saute until they turn pink. Then add the tomato paste and red pepper paste. Saute until they are mashed well. Sprinkle the black pepper and red pepper, then stir. Finally add the washed red lentils, bulgur and rice. Stir well. Pour the water little by little and stir. Then sprinkle the salt and stir again. Boil on high heat until it bubbles. Then set to medium heat and stir constantly. For sauce, melt the butter in the coffeepot or sautepan. Sprinkle the mint and chili flakes and saute again. Pour the sauce onto the soup. Serve hot
