Neapolitan four cheese pizza! By Jack

Ingredients (serves Four) 400g/ 140 oz plain flour. 1 teaspoon salt. 7g/ ¼ oz sachet easy-blend dried yeast. 250ml/ 9fl oz warm water. Olive oil to grease.

For the topping 10 tomatoes 2 cloves garlic 125g/ 4 ½ oz fontina cheese. 125g/ 4 ½ oz soft goats cheese 1 table spoon dried oregano.

Method 1)Put the flour and salt in a bowl. Add the yeast and water. Mix to form a dough. Knead on a floured board for 5 minutes until soft and elastic. Cover with a damp cloth and leave to rise in a warm place for 1 hour, or until doubled in size.

Method 2) meanwhile make the topping. Cut a cross on the tomatoes. Cover with boiling water and leave for 4 minutes. Drain, peel off the skins scoop out the seeds and dice the flesh. Peel and slice the garlic. Finely slice cheeses.

Method. 3)pre heat the oven to 220’c/ 425’f/ gas 7. grease a baking tray with olive oil. Knead the dough for 2 minutes, then cut off a small piece. Roll out the remainder on a floured surface surfaced to a 35cm/ 14 in round. Put onto tray.

Method 4) divide the remaining dough in half and roll into 2 long strips. Lay across the pizza base to divide into four sections.

Method 5) spread the tomatoes and garlic over the base. Top each section with one of the four cheeses. Sprinkle over the oregano. Reduce the oven to 200’c/ 400’f/ gas 6. bake for 25-30 minutes, or until the cheeses melt and the base is crisp and golden.

Results Then you have your perfect Neapolitan pizza!
