1 Our company produces a home made pasta similar to gnocchi,called “malloreddus”.This is a very old recipe, simple and delicious. Malloreddus are a traditional dish prepared on several occasions.

2 They are made with semolina flour and water and served with different sauces. In the past this kind of dumplings were the basic food for peasants who cultivate the wheat.

3 The name Malloreddu comes from the Sardinian word “malloru” that means bull.

4 To make them is quite easy:the dough is first cut into small pieces,then they are rolled to form long thin stripes of 15 cm and cut into small cubes. To give them the shape of a striped shell,the little cubes of dough are pressed on a straw basket called “ su ciuliri”.

5 It is also possible to use a striped wooden board. … or a fork!

6 The traditional recipe to cook Malloreddus is “alla Campidanese”with tomato sauce, spicy sausage and saffron.

13 Properties and Uses: Thymus has remarkable antiseptic properties, known since ancient times. It was, with other essential oils, a basic substance used by the Ancient Egyptians in the embalming process. Until the end of the First World War thymus was widely used as a natural disinfectant.
