In terms of functionality as it stands today, there are several differences between the individual products.
The mosty obvious and easy to determine is the maximum concurrency rate. However, it’s worth noting there are smaller user license counts on the higher Thousand series models, where a customer requires richer functionality, but a lower user count. One of the most popular SKUs in this line is 250 concurrent sessions.
Next, the Hundred series does not allow for Authorisation Policy management, or per app VPN. However, it does give a fully featured Web Application Firewall, which is particularly useful where backend resources require extra level of protection for remote users.

When that traffic hits your network you want to reduce the threat surface area.

A supposed client has no business on your network going anywhere else but the Exchange ActiveSync server.
