1 CATERING MENU Please let me know about any allergens that we need to consider. A list of allergens is available at the back of this menu. Everything is gluten free except for sandwich buns, but I can use gluten free if required.

2 MEAL OPTIONS Topped Sandwich BBQ Meal
All meals come with sauces, homemade pickles, cutlery, containers and napkins included Topped Sandwich A fresh bap overflowing with your meat of choice and topped (if you are in to that sort of thing) with your coleslaw of choice £5 per head BBQ Meal A large helping of your meat of choice (you may choose two to split) with two larger portions of your choice of sides (pickles are always included) £10 per head Additional Meats Add as many meats as you like for an extra £5 a head Additional Sides Add as many sides as you like for £3 per head £3 per head Please contact me with exact requirements so that we can create a customised menu that fits your budgeting needs

3 SLOW AND LOW BBQ MEATS Beef
All our meats come from reputable suppliers that have been thoroughly checked. They are always fresh, never frozen. We cook them to order and cut on-site so you always get the best flavour. Beef Rubbed with our signature Brisket Rub and then smoked over hard wood for about 12 hours. Our brisket is tender and flavourful, with a lovely smoke ring. It is dipped in a lovely brisket mop for serving. Sliced, Chopped Pork Pork Shoulder, referred to as Pork Butt in The States, is rubbed with our traditional BBQ rub and smoked for around 12 hours. The result is a delicious outer bark with tender meat inside. Sliced, Chopped, Pulled Chicken Our Chicken Rub is a unique blend of spices meant to compliment the flavour of chicken perfectly, and after a nice dusting of the rub we smoke our chickens for up to four hours at a slightly higher temperature to lock in all the juices. Pulled or Thighs Lamb Smoked lamb is a thing of beauty, and we can either hot smoke for a pink middle or slow smoke for a melt-in-your-mouth experience. The lamb is covered in a special wet rub and then served with our signature Sheep Sauce Chopped

4 VEGETARIAN OPTIONS Salmon Portobello Halloumi
We realize that not everyone enjoys meat so we do offer some vegetarian options for our customers. Salmon Fresh salmon smoked on a wood plank with red onions and our Sweet St. Louis BBQ sauce Portobello Halloumi Heaven The veggie equivalent of chopped BBQ made with smoked portobello, smoked red pepper and halloumi cheese dusted with our original BBQ rub Quorn Covered with our tasty original BBQ rub and smoked just like our regular meat – but in a separate container to eliminate cross contamination

5 SIDES We have chosen our range of sides from our favourites back home to complement our meats perfectly. All are made to order with the finest fresh ingredients Smokey BBQ Beans Haricot beans with sautéed onions, peppers and bacon – plus a little something special to sweeten the deal. We smoke the entire dish for two hours over hard woof to give it a lovely smoky aroma. Cowboy Beans A staple of cowboys on the trail, this savory bean dish incorporates ham hock, onions and garlic. Served with cheese, red onions and jalapenos to garnish. Smoked Green Beans Not your average greens! Green beans, thick bacon and onions are cooked together and then smoked for three hours to get a unique southern taste. Mayo Slaw The all-time picnic favourite, we take a traditional slaw recipe and spruce it up a bit with radish for zing and grape slices for a pop of sweetness. Vinegar Slaw There are only two types of people in this world: mayo slaw people and vinegar slaw people. For those who love the fresh zest of vinegar. Tex-Mex Slaw A gem from the southwest, this slaw uses sweet red and yellow peppers with coriander for a sublime freshness. Sweet Cornbread Hugely popular in the Carolinas, and made with ground corn meal, our sweet cornbread complements savoury BBQ perfectly. Jalapeno Cornbread Meanwhile, in Texas they do not have such a sweet tooth so they replaced some of the sweeter ingredients with a mature cheddar cheese and jalapenos. Corn on the Cob Imported from the USA! Supersweet silver and gold corn doused in butter, salt and pepper Pickles Homemade dill pickles, with a splash of extra flavour from garlic cloves and chillies. We include these with every meal so it does not count towards one of your sides.

6 SAUCES We make all of our own sauces from scratch and have a range of different flavour profiles and heat levels. Sweet St. Louis Created with my daughter, we wanted an approachable BBQ sauce for any age. It is a sweet and tangy sauce with a finish that is totally unique. Mild Nashvegas Its what the locals call Nashville, and this very Tennessee sauce is very Music City. Mild and zesty, its our newest sauce. Doctors Orders A blend of three types of chillies, this tangy BBQ sauce has a nice smokey body from chipotle peppers. My personal favourite. Medium Reaper Sauce A Carolina mustard BBQ sauce with a sweetness that offsets the mustard. We paired this with the hottest chili pepper in the world: the Carolina Reaper. Extremely Hot
