10 Kitchen The principal use of the kitchen is food preparation, but may include dining, laundry, and storage. Kitchen design presents many unique problems for the designer. Be sure to consider accessibility. The kitchen is usually the most expensive room in the house per square foot. 10

11 Kitchen Contemporary, functional kitchen. 11

12 Kitchen Accessibility
Most kitchen styles can be adapted for a handicapped person. Toe space: 6" deep and 8" to 11" high. Knee space: 28" to 30" wide, 27" to 30" high, and 21" to 24" deep. Clearance can be provided by an overhang or extended counterspace. 12

13 Kitchen Planning Planning an efficient kitchen involves:
Placement of appliances. Providing adequate storage cabinets. Providing food preparation facilities. 13

14 Kitchen Planning This contemporary kitchen has ample space for storage, food preparation facilities, and appliances. 14 (Wilsonart International)

15 Kitchen Work Centers Kitchen work centers include:
Food preparation center. Cleanup center. Cooking center. Consider the logical location of each of the kitchen work centers to minimize walking and increase efficiency. 15

16 Kitchen Work Center 16 (Lis King)

17 Kitchen Work Triangle The work triangle is one measure of kitchen efficiency. The distance from the front-center of the range to the refrigerator to the sink and back to the range is the length of the work triangle. The total distance should not exceed 22 feet. 17

18 Kitchen Work Triangle This work triangle is an efficient 17'-4". 18

19 Kitchen Storage The food and cooking utensils are stored near the work areas. 19

21 Kitchen Planned for Accessibility
The typical kitchen layout is generally acceptable for a handicapped person. However, work surfaces should be lower, including: Sinks. Cooking units. Countertop space. Space for wheelchairs must be provided. 21

22 Basic Kitchen Styles There are six basic kitchen styles:
straight-line kitchen. L-shaped kitchen. Corridor kitchen. Island kitchen. U-shaped kitchen. Peninsula kitchen. 22

23 Straight-Line Kitchen
The straight-line kitchen is frequently used in cottages and apartments. Little space is required for this design. Disadvantages are: Provides limited amount of cabinet space. Not very interesting. It is seldom chosen when space is available for another style. 23

24 Straight-Line Kitchen
24

25 L-Shaped Kitchen The L-shaped kitchen is located along two adjacent walls. It is an efficient design. It is more attractive than a straight-line kitchen. It has two work centers along one wall. Not intended for large kitchens. 25

26 L-Shaped Kitchen 26

27 L-Shaped Kitchen This L-shaped kitchen has lots of cabinet space and a contemporary decor. 27 (Manufactured Housing Institute)

28 L-Shaped Kitchen An L-shaped kitchen with more traditional decor. 28

29 Corridor Kitchen The corridor kitchen is located along two walls opposite each other. Usually small to medium in size; ideal for a long, narrow room. An efficient arrangement is possible. A major disadvantage is the traffic through the kitchen. 29

41 Island Kitchen The island kitchen may be a modification of other designs. The island may house the sink, cooking center, food preparation center, or serve as a countertop or snack bar. The island should be accessible from all sides. Clearance space around the island should be at least 4 feet. 41

46 Cabinets and Appliances
Appliances are available in a variety of styles, colors, and sizes. Kitchen cabinets provide the majority of storage space. Cabinets are produced in standard sizes in 3" multiples. Base cabinets are 34-1/2" H and 24" D. Wall cabinets are 12" to 30" H and 12" or 13" D. 46

47 Appliance Symbols 47

48 Kitchen Accessibility
An electric stove or cooktop provides more safety for a handicapped person. Use a wall-type oven at eye level. Use drawers in base cabinets. Use adjustable shelves in wall cabinets. The bottom shelf of a wall cabinet should not exceed 17" above the counter. 48

53 Kitchen Location The kitchen location is important.
It is the prime element of the service area. Its relationship to other areas of house requires careful evaluation. Locate it near the service entrance. Locate it near the dining room. Locate it near the laundry and a bath. 53

54 Kitchen Ventilation Ventilation is required in the kitchen.
A hood is better than a wall fan. Exhaust must be to the outside. 54

55 Kitchen Decor Decor should be pleasant.
Work centers should be well lighted. Select colors and styles that are pleasant. 55 (Photo Courtesy of Kohler Co.)

59 Kitchen Eating Areas Kitchen eating areas should be convenient for serving informal meals. Kitchen eating areas should be located outside the food preparation area. Allow sufficient space for seating and moving about. Good lighting is important for the eating area. 59

60 Kitchen Eating Areas Consider flexibility of the arrangement.
Eating counter options: Allow for knee space under the counter. Change countertop height. A table with a pedestal or open leg space is best for wheelchair users. 60

63 Clothes Care Centers Clothes care centers provide a location and facilities for washing, drying, pressing, folding, storing, and mending clothes. Intended to be more than a “utility room.” Should be bright and cheerful and located near the kitchen, if possible. Should be ventilated and well lighted. 63

64 Clothes Care Centers The clothes care center can also serve as additional space for recreation activities such flower arranging, crafts, or other hobbies. The floor should be resistant to water. Provide lots of counterspace. 64

72 Clothes Care Accessibility
For greater wheelchair accessibility in the clothes care center: A front-loading washer can be used. Place units on short platform to be more accessible. Placing the dryer above the washer may be suitable for those using canes, crutches, or walkers. Locate clothes care center on main floor. 72

73 Garages and Carports The purpose of a garage or carport is to provide shelter for the family cars. They range from small and simple to large and complex spaces. Attached to the house or freestanding. Sizes depend on number of cars, size and layout of house, and space available. Two-car space: 20' x 20' to 25' x 25'. 73

77 Single-Car Garage Garages with and without storage. 77

78 Two-Car Garage Small and large two-car garages. 78

79 Garage Accessibility To be handicapped-accessible, a garage or carport should be a minimum of 24' long. Minimum side clearance is 5 feet. Single-car width: 12' to 14-1/2' to accommodate a wheelchair. Use ramps rather than steps. 79

80 Garage Location The garage should be an integral part of the total structure. It should not detract from the overall appearance of the house. A covered walkway enhances free-standing structures. A garage can provide space for outdoor recreation or gardening tools. 80

82 Garage Location This garage is integrated into the total structure through the covered walkway. 82

83 Garage Design Ideas The floor should be at least 4" thick concrete and reinforced with steel or wire mesh. Good floor drainage should be provided. Include ample lighting. Consider fire protection—check the local code. 83

84 Garage Doors Garage doors are available in wood, fiberglass, plastic, aluminum, and steel. Single door: 8' or 9' wide and 7' high. Double door: 16' or 18' wide and 7' high. Higher doors are made for recreational vehicles. 84

85 Garage Doors Metal garage doors. 85

86 Garage Doors A double garage door and a single garage door. 86

87 Driveway and Turnaround
A driveway turnaround is recommended if space is available. Avoid backing into the street. Minimum driveway width is 10'. Plan for a full-size automobile. 87

91 Glossary Clothes Care Center.
Provides an area for washing, drying, pressing, folding, storing, and mending clothes. It is intended to be more than a “utility” room. Corridor Kitchen. A style of kitchen where work centers are located on two walls opposite each other. Corridor kitchens are usually small to medium in size and are ideal for long, narrow rooms. 91

92 Glossary Island Kitchen.
May be a modification of the straight-line, L-shaped, or U-shaped style. The island may house the sink, cooking center, or food preparation area. In some instances, it may serve as a countertop or snack bar. L-Shaped Kitchen. A style of kitchen with work centers located along two adjacent walls. This style results in an efficient workspace. 92

93 Glossary Peninsula Kitchen.
A style of kitchen that is popular because it provides plenty of workspace. It is attractive and can easily join with the dining area using the peninsula as a divider. Service Area. Supplements the living and sleeping areas of the house; includes the kitchen, clothes care center, garage or carport, utility, and storage. 93

94 Glossary Straight-Line Kitchen.
A style of kitchen with all work centers on one wall; frequently used in small houses, cottages, and apartments. Little space is required for this style and it usually provides for an efficient arrangement of kitchen facilities. U-Shaped Kitchen. A style of kitchen that is probably the most popular and one of the most attractive. It has a highly efficient workspace. The work triangle is compact and functional. 94

95 Glossary Work Centers. Areas where work is performed in the kitchen; includes the food preparation center, cleanup center, and cooking center. Work Triangle. A measure of kitchen efficiency, it is determined by drawing a line from the front center of the range to the refrigerator to the sink and back to the range. 95
