Designer Fruit Smoothie Assessment:

Design Brief: As summer approaches the Camborne East Secondary College canteen is thinking of ways to allow students and teachers to stay hydrated and make sure they are getting at least two serves of fruits per day. Jenny from the canteen has asked if Year 7 students could design and produce a fruit smoothie that would sell well at the canteen. All Year 7 students will be doing this by designing their own fruit smoothie during theory classes by completing a range of activities, and will use the Cranbourne East Secondary College Food Technology kitchen to produce their smoothie. They will produce their final smoothie in week 9 of term 4. The reason for making a fruit smoothie for the canteen is because it is a healthy alternative for students instead of purchasing fruit juices and soft drinks.

WHEN: 9th Week of Term 4, 2015 WHERE: CESC Food Technology Kitchen. WHO: you will be making a fruit smoothie for the students, teachers and the canteen lady Jenny of CESC. What type of Milk are you choosing and why? The milk that we chose as a group was Low- Fat Milk we chose this milk because personally we think that it’s a more healthier type of milk. Also the canteen lady from Cranbourne east Secondary College asked all the year 7’s to make a healthy fruit smoothie What is soy milk and why might some people use it? Soy milk, also referred to as soymilk or soya milk, is a plant that is produced by soaking dried soy beans and grinding them with water. Also people need to have soy milk because of nutritional reasons What are you using for decoration and how will you be using it on your smoothie? The decoration that we are using as a group is 3 mint leaves and 3 strawberries and how we will be using on our smoothie will be cutting the strawberries so they can sit on the side of the cup and the mint leaves on top of the smoothie in the middle.

If there were other fruits available what might you choose? If pineapple and star fruit was available to put in our smoothie we would put it in our smoothie because it would create a tropical flavor to the smoothie. What flavoring Ingredients are using and why? The flavoring ingredients that we chose together as a group was plain yoghurt and vanilla essence I chose these flavoring ingredients because I didn’t really like the other flavoring ingredients and I have had them in a smoothie before. What are you using for decoration and how will you be using it on your smoothie? The decoration that we are using as a group is 3 mint leaves and 3 strawberries and how we will be using on our smoothie will be cutting the strawberries so they can sit on the side of the cup and the mint leaves on top of the smoothie in the middle.

We chose as a group to have mangoes and frozen mixed berries we chose these fruits because we think as partners in this assessment that they would have a good combination together and taste good and plus one of the people in our group has an allergy to kiwi fruit. What fruits would taste the best together? If we got to choose our own fruit would try and make a tutties fruity smoothie because that smoothie doesn’t leave and after

Design Questions: List all the utensils and equipment that you will need to produce your smoothie: Mixing bowls to collect your fruit and mint leaves. Chopping Boards- So you can cut up your ingredients Knife- so you can cut up your fruits Blender- so you can finish your healthy fruit smoothie Glass/Cup- so your can put your finished product in there Straw – so you can drink your healthy fruit smoothie Measuring Jug- so you can collect your milk Measuring Cups- so you can collect your yoghurt Measuring Spoons- so your can collect the vanilla essence Apron- so you can’t spill your food ingredients on your clothes Sink- so you can was your hand and clean your dishes Recipe card- so you can follow your recipe step by step

Design Questions: Will you be washing your fruit? Why is it really important to wash your fresh fruit before you use it? Yes we will be washing our fruit. It is really important to was your fresh fruit before you use it because it gets rid of all the bacteria that is found on the fruits. If you were to use ice-cream, would you get it at the start and let it sit on your bench until you are ready to use it? explain If I was to ice-cream in my smoothie I would get it towards the end instead of getting it at the start because if I was to get it at the start and let it sit on the bench it could reach the danger zone

Design Questions: If you were designing a fruit smoothie for someone whom is fructose intolerant, what ingredients would you use instead? 2 oranges, peeled 2 large carrots, chopped 1/2 to 1 inch ginger to taste 1-2 splashes of water ice to chill if desired

Safety Information How to use and wash the blenders that you'll be using to make your healthy fruit smoothie. Make sure your hands aren’t in the blender otherwise your hand will become the smoothie. Make sure the water doesn’t get in the motor when it comes to washing the blender Don’t put your fingers in the power switch because you can get electrocuted Make sure you clean it the correct way and don’t leave any other food bits in it because it can cause cross conimation
