Barware Cocktail Glassware Margarita Snifter Footed Mug Hurricane
Snifter is short stemmed because it is meant to sit in the palm of your hand. The footed mug is used to serve after dinner specialty coffees and has a handle to protect your hand from hot beverages. Margarita glasses have a long stem much like wine glasses. Any long stemmed glassware is meant to be held by the stem, so the heat from your hand doesn’t affect the temperature or composition of the drink. A half pint is commonly 12oz even though a pint is technically 20oz. Most bars stock 12oz half pint glasses because they also hold a 12oz (bottle) of beer. When boston glasses are used to serve pints, they are called sleeves. Bars try to pass these off as pints, even y though they’re saving 4oz or 20% per beer. Buyer Beware!!! Beer glasses should be kept separate from cocktail glasses whenever possible, and used strictly for beer. Pints are popular, pitchers are a great way to serve beer, much like a bottle of wine, it’s very easy for a bartender to serve a pitcher then focus their efforts on other guests. Half Pint 12oz. The proper volume to serve in a glass of wine is to the widest point in the glass. Red wine glasses are wider to allow more oxidation. White wine glasses tend to be smaller to maintain a cooler temperature. Champagne flutes used to be shallow martini like glasses, but new tall thin champagne flutes maintain carbonation for longer. Serving Wells A Bartender’s Service Well is the area in which 98% of all drinks are made and usually consists of the following: Ice Well & Cold Plate Soda & Juice Gun Draft Beer Tap Speed Rail Garnish / Straws / Napkins In the ice well, the cold plate must be covered with ice in order to insure that the pop is carbonated. Ideally you want your bar to be set up so that nothing is more than 2 steps away.

Back Bar Back Bars are most often located behind the Bartender.
Items often kept on the Back Bar are as follows: Premium Liquor (Up-selling Items) Liqueurs (ex. Baileys) P.O.S. System Cash Drawer Never, ever clutter, no empties, no drinks, never,never,never….you should be able to turn around blind to find what your after. Stock it up, backup juices, straws napkins, anything you can run out of during your shift, think ahead

Bar Fridges There are numerous types of fridges found on and in Bars.
Located on the bar itself: Bar Fridge (Front loaded) Beer Coffin (Top loaded) Located elsewhere inside the Bar: Keg Fridge (Storage for in use & back-up Kegs) Beer Fridge (Storage for back-up cases of Beer) Coffin style fridges make it easier to open doors and access the beer while people pass behind you. Front loader fridges make it impossible to move behind the bar when a door is open.

A “still” is the piece of equipment used to create or “distill” a spirit. There are only a few Carterhead stills remaining in the world today and three are exclusive to Bombay Sapphire. Unlike many other gins, which boil their botanicals directly in the spirit to achieve their taste, the 10 botanicals in Bombay Sapphire are held separate from the spirit in a perforated copper basket. Made from rye, corn and barley Aged minimum 3 years in wooden barrels There are 4 main types of Whisk(e)y and one sub type. Rye, Bourbon, Scotch and Irish. Tenessee Whiskey (also known as Jack Daniels) is so popular that it has created a subsection of it’s own Rye is a type of grain, like Barley or Wheat Must contain at least 51% rye grain to be considered a Rye Whiskey. Most people know Rye as “Canadian Whisky” Ryes can be produced anywhere, as long as the right concentration of Rye is in the mix. Quality Premium Super Premium Crown royal is a Canadian Whiskey, but contrary to most people’s belief, it is not a Rye. The Irish and American distilleries adopted the spelling "whiskey", with the extra "e", to distinguish their higher quality product.[2] Today, the spelling whisky (plural whiskies) is generally used for whiskies distilled in Scotland, Wales, Canada, Australia, and Japan, while whiskey is used for the spirits distilled in Ireland and the United States.

Types include Blanco, Reposado and Anejo Named after and made in Tequila, Mexico There is no worm Tequilas of Various Styles Tequila is an agave-based spirit made primarily in the area surrounding Tequila, 65 kilometres in the northwest of Guadalajara and in the highlands of the western Mexican state of Jalisco. Mexican laws state that tequila can be produced anywhere in Mexico. The volcanic soil in the region surrounding Tequila is particularly well suited to the growing of the cactus-like blue agave, and more than 300 million of the plants are harvested there each year. There are two basic categories of tequila: mixtos and 100% Agave. Mixtos use up to 49% of other sugars in the fermentation process, with Agave taking up the remainder. Mixtos use both glucose and fructose sugars. With 100% agave tequila, blanco or plata is harsher with the bold flavors of the distilled agave up front, while reposado and añejo are smoother, subtler, and more complex. As with other spirits that are aged in casks, tequila takes on the flavors of the wood, while the harshness of the alcohol mellows. The major flavor distinction with 100% agave tequila is the base ingredient, which is more vegetal than grain spirits (and often more complex). Tequila is usually bottled in one of five categories: * blanco ("white") or plata ("silver") – white spirit, un-aged and bottled or stored immediately after distillation, or aged less than two months in oak barrels; * oro ("gold") – un-aged "blanco" tequila, blended with rested or aged tequilas, and often with caramel coloring, sugar-based syrup, glycerin, and/or oak extract added so as to resemble aged tequila; * reposado ("rested") – aged a minimum of two months, but less than a year in oak barrels; * añejo ("aged" or "vintage") – aged a minimum of one year, but less than 3 years in oak barrels; * extra añejo ("extra aged" or "ultra aged") – aged a minimum of three years in oak barrels. This category was established in March 2006.

The worm – Although the custom is relatively recent, larvae are used frequently by several brands of mezcal to give flavor to the drink. A whole larva is deposited in the bottle, normally after having previously been cured in pure alcohol. It is not known exactly where and when the practice was originated; supposedly it was to indicate the level of toxicity of the Mescal. If the worm was present, it meant that the Mescal was safe to drink, if the worm had disintegrated, the Mescal ws rumored to be poisonous There is nothing to support the widespread myth that the worm contains hallucinogens or aphrodisiac properties. When a worm is included, the mezcal is known as con gusano ("with worm"). Aside from its consumption with mezcal, the maguey worm is considered a delicacy in Mexico and can be found on restaurant menus throughout the nation. The use of the worm is exclusive to mezcal, since the Mexican standards authority, prohibits adding insects or larvae to tequila.
