2 Protein Objectives To understand what protein is. To understand the difference between LBV’s and HBV’s. I know the structure of protein. I can understand the different functions of protein in the diet. I can give a few food sources. I know the structure of protein. I can understand the different functions of protein in the diet. I have some understanding about high biological and low biological value proteins and can name a few food sources. I know the structure of protein. I understand two lows make a high.

3 Protein in the diet The building blocks of your body.
Helps the growth and repair of cells in your body. Second source of energy from your diet. Without them your body will loose muscle so you can not generate energy.

4 Protein in the diet Protein is a source of energy.
Protein helps keep skin, hair, and nails healthy. Protein, like most other essential nutrients, is absolutely crucial for overall good health.

Proteins are large compounds of smaller units called amino acids. Amino acids group together to build a protein, which then groups together to make our body. There are 22 different types of amino acids. Our bodies can make 11. 8 essential amino acids for adults 10 essential amino acids for children – they need an extra two for growth. Man 22 different types Our bodies can makes some of these but not all. Adults need to get the other 8 from foods. Children need to get the other 10 from foods. ESSENTIAL AMINO ACIDS

7 Where does protein come from?
Animal Sources Plant sources Meat, fish, dairy, eggs. All contain the 8 ESSENTIAL AMINO ACIDS our body needs. They have a high biological value (HBV). Beans, peas, lentils, nuts, seeds, cereals. They do not contain 8 ESSENTIAL AMINO ACIDS. They have some missing. (except soya beans). They have a low biological value (LBV).

= 8 ESSENTIAL AMINO ACIDS inside Therefore it has a high biological value. = 7 ESSENTIAL AMINO ACIDS inside. NOT enough. Hummus and pitta Therefore they have a low biological value. = 5 ESSENTIAL AMINO ACIDS inside. NOT enough.

Who may not get enough protein in their diet? Vegetarian: Do not eat meat or fish Vegan : Do not eat any animal product Lacto vegetarian: eats dairy products but not eggs, meat or fish. Lacto- ovo vegetarian: eats eggs and dairy products but not meat or fish. High biological value

11 Deficiency - Kwashiorkor
Symptoms: Loose weight . Tissues waste away. Ribs become visible. Fat belly because digestion is affected. The body becomes frail and weak. Eyes appear sunken. Brain damage and death This happens when infants are weaned from breast milk and their diet is replaced with less nutritive food that does not contain complete proteins.
