2 Why do some foods give people a bad reaction?
Food reactions fall into two classifications these include: food allergies –The body’s reaction to a protein that triggers an immune response food intolerance – A body’s reaction to a food that may cause distress, but not an immune response. Lactose intolerance and gluten intolerance fall into this category. 4.02R Foods I Most Wanted

3 Food Allergies The FDA now requires that the most common food allergens be clearly identified on food labels. The eight most common food allergens are: Milk Eggs Peanuts Tree nuts Wheat Soy Shellfish Fish All these foods contain proteins.

4 Food Allergies What is a food allergy?
“Food allergy is an abnormal response to a food, triggered by the body’s immune system.” Reference: Food allergies often appear suddenly. What symptoms may occur? Hives, itching, skin rash, trouble breathing, swelling, dizziness or fainting Food allergies can even be fatal (cause death)

7 Food Intolerance A physical reaction to food but does not involve the immune system. May develop and worsen over time An intolerance usually is a less serious digestive problem and may include: Lactose intolerance (milk) Gluten intolerance (wheat protein) Food Intolerances often result from the body’s inability to process (digest or break down) a certain food or nutrient.
