Vocabulary Food Intolerance- a sensitivity to a food that does not involve IgE Immunoglobin E (IgE)- a type of antibody found on basophils and mast cells Basophils- a type of immune system cell found in blood Mast Cell- a type of immune system cell found in body tissue Celiac Disease- an immune system reaction to gluten that causes damage to the lining of the intestine Lactose intolerance- the inability to digest lactose

Food intolerance A food intolerance is a reaction to a food that is not IgE mediated Some food intolerances include: Celiac Disease Lactose Intolerance

Celiac Disease A reaction to gluten that results in the immune system attacking the lining of the gut Leads to damage to the lining of the intestine that causes pain, diarrhea, gas, and bloating If the damage becomes bad enough, it can lead to malnutrition Celiac disease is treated by removing gluten from the diet

Lactose intolerance Lactose intolerance happens when a person makes little or no lactase, the enzyme that digests lactose Symptoms of lactose intolerance are bloating, gas, and/ or diarrhea after eating foods containing lactose Those with lactose intolerance need to avoid foods with lactose in order to avoid symptoms

Activity Randomly select a food allergy or food intolerance from the basket (I will go around to you) Write your food allergen or intolerance on your paper Create a three day meal plan for your client Include breakfast, lunch, dinner, and two snacks per day. (15 “meal” total) Make sure your name is on the paper Turn it into the tray
