Sweet Potato Casserole

4 1/2 cups (1064 Ml) cooked and mashed sweet potatoes 1/2 cup (125 grams) butter 1/3 cup (79 ml) milk 1 cup (237 ml) white sugar /2 teaspoon (2.5 ml) vanilla extract 2 eggs, beaten

Topping: 1 cup (237 ml) light brown sugar 1/2 cup (125 grams) all-purpose flour 1/3 cup (75 grams) butter 1 cup (237 ml) chopped almonds

Directions 1. In a large bowl, mix together mashed sweet potatoes, butter, milk, sugar, vanilla extract, and eggs.

2. Spread sweet potato mixture into the prepared baking dish.
3. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.

3. In a small bowl, mix together brown sugar and flour. Cut in butter until mixture is crumbly, then stir in almonds. Sprinkle mixture over the sweet potatoes.

4. Bake for 30 minutes in the preheated oven, or until golden brown.
