2 What is food? Food makes your body work, grow and repair itself. The kind of food you eat can affect the efficiency of these processes. Body function and the food that sustains it is infinitely complex. Food is in fact one of the most complicated sets of chemicals imaginable. Healthy eating healthy eating means eating a variety of foods that give you the nutrients you need to maintain your health, feel good, and have energy. These nutrients include protein, carbohydrates, fat, water, vitamins, and minerals

3 Chemicals in food Food is composed of many different chemical substances - 'macronutrients' (major nutritional components that are present in relatively large amounts, such as protein), 'micronutrients' (major nutritional components that are present in relatively small amounts, such as vitamins), water, and roughage (dietary fiber). Many other components can also be present in food . Food may contain colors (natural and synthetic), flavors, pharmacologically active substances (such as caffeine, steroids, and salicylates, which chemically affect the body), natural toxicants (naturally occurring poisons, such as cyanide), additives, and various contaminants (substances resulting from a contaminated environment, such as pesticides). Even characteristic flavors such as those of oranges and passion fruit can depend on the presence of a dozen or more chemicals.

4 Afghan traditional foods
As the owner of a strong Antiquity, Afghanistan has accommodated different civilization in itself and each civilization had different Food culture. In this presentation we want to notice some popular traditional foods that is still choking in Afghanistan

5 کیچیری قروت هراتی Herat’s kichiry ghoroot
Kichiry ghoroot is the most popular kind of food in Herat on the west of Afghanistan. Usually in the first day of winter Herat residents Cook this food, set behind the steam and celebrate this day by eating this food. It composed from Short grain rice, Crud and meatballs.

6 کابلی پلو و یا قابلی پلو Kabuli rice or ghabouli rice
This kind of Cooked rice is vary popular in the middle Asia that composed from long grain rice, sheep's Boiled meat, carrot, raisins, During pistachios & Almond.

7 بولانی Bolani is a flat-bread from Afghanistan, baked or fried with a vegetable filling. It has a thin crust and can be stuffed with a variety of ingredients, such as potatoes, spinach, lentils, pumpkin, or leeks. It can be served with plain yogurt or mint yogurt.

8 Mantu In Afghan cuisine, the mantu are filled with beef or lamb mixed with minced onions and spices, steamed and then topped with a very typical sauce (seer moss, lit. ‘garlic yoghurt’) of yoghurt, dried or fresh mint, lemon juice and minced or pressed garlic. The mantu are also typically topped with a very small amount of tomato-based sauce which can include split peas, red kidney beans and/or some sautéed ground meat. The amount of yoghurt sauce is typically much greater than the tomato sauce; the tomato sauce is meant to be dotted on top - not covering the dish. Chutney, a spicy green or red pepper condiment sauce, may be sprinkled on top. Many Afghans also like to serve mantu with a carrot qorma or stew, instead of a tomato-based sauce.

9 قورمه سبزی Ghormeh sabzi
Gormeh sabzi is an herb stew. It is a very popular dish in Iran and neighboring Azerbaijan Republic. It is often said to be the Iranian national dish. The history of Ghormeh sabzi dates back at least 500 to 2,000 years. And it is also have long date in Afghanistan. The main ingredients are a mixture of sautéed herbs. consisting mainly of parsley, leeks or green onions, coriander, seasoned with the key spice of dried fenugreek leaves, whit Red beans and Boiled Chicken

10 Shami kebab شامی کباب Shami kebab is a popular local variety of kebab from the Indian subcontinent. It is part of the Pakistani, Punjabi, Indian, Afghani and Bangladeshi cuisines. It is composed of a small patty of minced or ground meat with ground chickpeas, egg to hold it together, and spices.
