4 The DREAM objectives & Overall goal
The DREAM project objectives are set towards mimicking food complexity that arises from its structure and composition. The overall goal is to develop food models to be used as tools that can be exploited across all major food categories with the purpose to facilitate development of common approaches to risk assessment and nutritional quality. 5/11/2018

5 DREAM experimental work
DREAM address four major food groups: Filled cellular solid: tomato, cabbage, apple Proteinus cellular network: pork, poultry Combined gelled/dispersed/aerated systems: Yoghurts, cheeses, protein-based foams, etc. Open solid foam: bread, biscuits, corn-flakes 5/11/2018
