FAIRTRADE

2 Star Challenge Lesson objective: To learn and understand fair trade. To understand how the melting method is used in the method of brownies. I know what fair trade is and some of the journey of cocoa. I know what a bain Marie is and the method used to make brownies. I understand about fair trade and most of the journey of cocoa. I understand why a bain marie melting method is used to making brownies. I can think about the pros’s and con’s of fair trade. I know the journey of cocoa. I can think about the functions of ingredients of brownies and I understand the use of a bain marie and melting method.

3 What is Fairtrade? A group that makes sure workers from developing countries receive a decent wage. Ensures good working conditions. Makes sure that only adults are employed to work- not children. Helps villages in developing countries to live healthily and happily without needing charity or hand-outs. Looks after the environment. Farmers are paid fairly so don’t need to use harmful chemicals to grow more food, faster.

16 Bain Marie Translated means water bath and is used to heat food gently or keep at a low heat.

What do we do to all the ingredients? Melting Method

18 Chocolate Brownies Demo Ingredients Method
150g Plain flour (6 tbl spoons) 250g caster sugar 225g chocolate 200g margarine 3 eggs 1 tsp vanilla essence Method 1. Grease and line baking tin 2. Melt margarine and chocolate in a bowl over a pan of hot water.. 3. Whisk the eggs and all the sugar together for 2-3 minutes 4. Stir in melted chocolate, vanilla essence and mix well with a spoon. 5. Add flour 6. Pour brownie mixture into baking tin – the mixture should be runny Bake for 20 – 25 mins on Gas 4 / 180°C Remove and leave to cool.

Aprons on, hair tied back, wash hands etc. Gather your ingredients at your work station. Stand and wait for my next instructions. You have 3 minutes to do this. GO!

Undercooked brownie, possibly sunken in the middle. Incorrect use of a bain marie. I have met practical time deadlines and left my station clean and tidy. Well baked brownie, correct use of a bain marie, understanding of when the brownie is cooked and needs taking out of the oven. Perfectly baked brownie, followed the method independently . Understanding of the bain marie. May have adapted the recipe.
