The 2013 vintage shows interesting climatic conditions but was in favor of allowing a more rational growth cycle, that over time made the fall harvest period within the historical average. The winter began with a sharp drop in temperatures below normal. January, February and March were characterized by high rainfall, higher than the seasonal average, described as one of the most rainy and snowy seasons in the last 50 years. From the second half of July, however, arrived the great heat wave, where the difference in temperatures between day time and night time created conditions for a long maturation and without a doubt the best of the two previous years. 100% CHARDONNAY This noble vine has found in the Dolomites its ideal climatic conditions for developing its unique freshness, fragrance, and intense aromatic notes. 100% HILLY VINEYARDS The vineyards are located along the beautiful Adige Valley at an altitude ranging from 350 to 600 meters above the sea. The strong temperature changes nurture the synthesis and accumulation of aromas as well as the conservation of a refreshing acidity. 100% HAND-PICKED Only the best grapes are carefully selected and picked by hand by our wine growers, and then carried quickly to the cellar to be processed into wine. 100% COLD MACERATION After de-stemming and crushing, the must is cooled to 12°C and rest in contact with the skins for 8-10 hours, in order to slowly extract the elegant and rich aromatic compounds. 100% FREE RUN MUST At the end of the cold maceration phase, only the free run must rich in fragrances and flavors is collected. No pressing is performed, avoiding the extraction of polyphenols and tannins into the must. 100% VINIFICATION IN STEEL TANKS To preserve the aromatic richness of the Chardonnay grown in the beautiful Dolomites area, vinification takes place exclusively in large steel tanks with no aging in oak barrels. 100% BATONNAGE During the fermentation in tanks, the base wine is periodically subjected to re-suspension of yeasts, which provide richness and roundness - in addition to aromatic complexity. 100% MALOLACTIC FERMENTATION The base wines are all subjected to malolactic fermentation in order to increase the aromatic complexity and the viscosity on the palate. VINIFICATION Rotari Brut is processed according to the method champenoise. The second fermentation takes place in the bottle and lasts for days, where it rests on the lees for at least 24 months.
