Design brief This unit of work involves you researching, designing, producing and evaluating a decorated, iced cake suitable for a special occasion. The cake chosen for the base has to be a rich fruit cake. After covering your cake with almond icing, and then fondant icing the decorating of your cake will be completed using royal icing or fondant icing. All decorations for your cake must be hand made by you and edible (excluding the use of ribbon and wires if needed). Your decorations or designs can be completed using a variety of techniques either using flooding, piped work including writing, sculptured figures or stencil work.

Let’s look at the Design brief
In this unit you are required to make a rich fruit cake and decorate it suitable for a special occasion. I love hamburgers. Merry Christmas Happy 4th birthday !

Icing your cake….. You will first have to cover your cake with almond icing… 1. Plugging up any holes with almond icing 2.Lightly ‘paint” your cake with thinned apricot jam 3.Cutting away any excess icing

Icing your cake …. And then cover your cake with fondant icing.
(This icing may be coloured.)

Decorating your cake …. Then your cake can be decorated using a variety of techniques. FLOODING….

Decorating your cake …. Or using fondant icing to make sculptured 3D figures

Decorating your cake …. Or using stencils from fondant icing or piped work using Royal icing ( it looks like meringue)

All decorations must be hand made by you, using fondant or royal icing , with the exception of wires or ribbon.

What do you have to do? Step 1. Write down all the constraints you find from the design brief above. i.e. I must ….. You will hand up this assignment in electronic form PLUS your 3 designs as a hard copy, coloured and annotated on the due date

Research Step 2. Find 5 completed cakes that you like from the ‘F’ drive or internet. Import the cake into your assignment, and then explain why the cake appeals to you and what equipment would you require (on next slide) if you were to make the cake. Be specific! (see equipment used on next slide)

To achieve this I would need :
Here is a sample I like this cake as it is very neatly done and shows a lot of care in the decorating. It looks realistic because of the ribbon, and how it is so fine and lifelike because of the creases in the bow. As my occasion is Christmas, this present idea could suit my theme. To achieve this I would need : Red and white fondant icing A writing nozzle to be able to write on the gift tag. A disposable hat to act as stuffing while the bow hardens. A knife to cut the ribbon ends. Rolling pin to roll out the fondant icing A star nozzle to pipe around the bottom of the cake.

Research Step 3. Create a mindmap!
A) Write down 3 special occasions that you could celebrate. b) For EACH of the themes, write down 3 ideas on how you could decorate your cake both for the top AND sides. i.e 9 suggested cakes. Ie for Father’s Day I could …. 1. Decorate the top of my cake with my Dad in a sculptured fishing boat, with fish and seaweed stencils all around the sides. 2. OR ?? 3. OR ??

Research Step 4. Now you should have a clearer idea on what you want to do. Fill 3 slides ( or with ideas of images, fonts, designs etc that will help you to design your special occasion cake. These are ideas for your cake. Annotate your findings saying why they would be suitable for your theme. Make sure the slides are full , not just a few ideas. Do not include full cakes here. I think these chicks would look good coming out of my cake. This would be an easy shape to flood. I could make this basket of eggs using egg stencils and cutting out basket by hand

If you would like to complete these 3 research slides as a combination of electronic and hand drawn ideas, that would be acceptable.

Step 5. You will have to design your cakes on A4 paper using the correct template ( circle, square, heart). You will need to design 3 cakes and then decide on your preferred design. You will have to annotate your designs explaining how it will be achieved ie flooded, piped, stencilled etc., don’t write red, pink etc Make sure you really think about your designs as you will get marked on how close your end cake reflects your design.
