In 1648, a Flemish alchemist, Jan van Helmont, had a theory. To test it, he grew a tree in a tub of soil, adding nothing but measured quantities of water for five years. During that time he kept track of the weigh of the soil and the tree. At the end of the experiment the tree had gained 164 pounds and the soil had lost 2 ounces. 8 They act as doorways for raw materials such as carbon dioxide, water vapor and waste gases to enter and exit the leaf. Stomata usually are open during the day when most plants need to take in raw materials to make food. They usually are closed at night when food making slows down. Stomata also close when a plant is losing too much water. This adaptation conserves water, because less water vapor escapes from the leaf.

Photosynthesis produces food. Organisms that carry on photosynthesis provide food directly or indirectly for nearly all the other organisms on Earth. Photosynthetic organisms, use carbon dioxide and release oxygen. This removes carbon dioxide from the atmosphere and adds oxygen to it. Most organisms, including humans, need oxygen to stay alive. As much as 90 percent of the oxygen entering the atmosphere today is a result of photosynthesis.
