2  A. Over mixing  Gluten overdevelops and cake is tough and dry Cake will crack on the top Low volume cake B. Under mixing  Low volume Greasy or dry spots in cake

3 V. Baking A. Always...preheat the oven B. The pan must...be greased or lined if it is a shortened cake Cakes should ... NOT touch each other D. When placing them in the oven... Arrange so heat is evenly distributed E. To test to see if it is done...touch top and see it if springs back or use a toothpick in the center – it should come out clean
