A few favorite responses to findings/inspection issues over the years:
Q to a food inspector: Where is your flashlight? A: I borrow Betty’s (the secretary). Q: Have you seen any mice in the warehouse? A: Oh yes, but they were just passing through. (At least 64 were later caught in that warehouse.) Q: When was the employee trained for that job? A: About 15 minutes after you interviewed him. Situation: Scale used for in-process checks had missed being calibrated/ certified. Cause: Employee’s favorite scale, so he stored it in his locker after his shift. CPAP response: Problem solved, employee fired.

Quality Systems Audits
Contractors producing/assembling under Higher Level Quality contract requirements. Quality System in place: Equivalent to ISO 9001 or better. Frequency: Goal is once a year with follow-up when needed. Length: 2 ½ - 4 ½ days. Food Defense Plan implementation audited at the same time.

Currently 18 contractors subject to QS Audits. (17 CONUS, 1 OCONUS)
