Mr.Chuang develop new skill of cabinet air dry. He try this way for 4 years. In beginning, most of roe easy to rotten if lower salt. Finally , he control well of balance between humidity and temperature . And his roe can lower 40% salty than traditional way ,

5. Farm – Factory process control
How to bleeding rich roe? Mr.Chuang co-work with nutritionist & Chiayi University professors. They have special supplement feed for fish. All the feed material imported from EU and Russia instead of local or south Asia. So their feed cost higher 2-3 times than other competitors
The special nutrition feed – Mullet egg will increase good quality oil . It will turn to be good high-density lipoprotein .
Except nutrition , it will roe taste will be creamy and soft.
