Dock is found throughout N America as a very successful weed following disturbance Commonly seen in pastures, abandoned fields, along fence rows and the edges of fields

CURLY DOCK Rumex crispus
A perennial plant with basal leaves arising from a deep tap root The basal rosette may persist for several years prior to flowering The leaves with wavy margins may attain a length of 50 cm The petioles vary from 5-15 cm long The young leaves may be used as greens The rolled young leaves tend to be the most tender look for the fold lines stretch the leaf, older leaves do not stretch The petioles of young leaves a may be peeled and eaten raw Young flowering stalks provide an excellent vegetable. The roots although fibrous may be used as a vegetable

Flowering occurs in late spring with a stalk reaching 60 to 150 cm A terminal cluster or panicle of flowers is formed, about 25 to 70 cm in length

Processing the fruits is another matter Some remove the chaff, others grind the fruits whole Seeds may be ground to produce a flour. Curly dock bread the flour is gluten free and is mixed with wheat flour in baking

DOCK Rumex spp. DANDELION, GARLIC MUSTARD AND CURLY DOCK SALAD WITH HOT BACON FRENCH DRESSING Big bowl of freshly picked greens, washed and torn* 1 medium red onion, diced 5 slices bacon 3 eggs, beaten 1/3 cup plus 2 Tablespoons cider vinegar 1/2 cup sugar Add onions to greens in bowl, toss. In skillet, saute bacon until crisp. Drain off most of the bacon grease (leave about 2 tablespoons). In small bowl, blend eggs, vinegar and sugar with wire whisk. Pour egg mixture into pan with bacon and return to heat (medium-low) WHISKING CONSTANTLY (you don’t want scrambled eggs) until mixture thickens considerably. Serve very warm over greens.

DOCK Rumex spp. The curly dock flour bread ingredients: -1 cup white flour -1 1/2 cups whole wheat flour -1 1/2 cups curly dock flour prepared as described above -2 teaspoons salt -1 teaspoon sugar -2 tablespoons olive oil -30g yeast or 7 teaspoons of yeast(the normal quantity for a bread) -lukewarm water(you’ll figure the quantities once you add it to the rest of ingredients) Add all the ingredients in the mixer except for the sugar, yeast and water. Add some lukewarm water and the sugar over the yeast and let it stay for a few minutes, until it dissolves, add it to the rest of ingredients in the mixer, afterwards. Start mixing and add the lukewarm water, little at a time, until it forms one big dough moving in the mixer. Mix it for 1 minute. Let the dough lay covered for 2h. Take the dough, knead it with the hands just by packing it a few times. Make a bread shape, set in a tray greased with oil. Make some cuts on the bread and set it in the oven at 392F for 30 minutes. Take it out and let it cool.

DOCK Rumex spp. Cattail Dock Bread 1 cattail hotdog stalk (seed fluff)
1 cup oats 1 cup curly dock seeds, ground fine 1/2 tsp salt and a pinch of kelp 1/4 cup sunflower oil 3/4 cup good water 1 tbsp honey Harvest the cattail flour by collecting the brown hotdog sticks in the fall. Carefully pull the seeds free from the stalk without seeding a wetland in your kitchen. Combine the oats, dock seeds and cattail fluff in the blender dry with the salt and grind until fine flour. You may need to do this in three batches because of the fluffy nature of cattails. Place in a bowl and knead in the oil, water and honey. Form into loaves and dry until done.
