History Madrid, originally called Mayrit, was founded by the emir Muhammad at the end of the IX century. It was under the Arab occupation of the Iberian Peninsula, that the city gained importance, since initially the main city in the Spanish plain had been Toledo.

INGREDIENTS Olive oil Calamares en anillas Lemon Preparation Calamares a la romana Eggs Flour To clean the squid, remove their heads. Cut the rings, season them and pass them for a little flour. Shake the remaining flour. Beat the eggs, pass the squid on them and drain well in a colander. Then, fry them in very hot oil. Serve in a bowl with a slice of lemon
