FOOD STORY South Korea Pa-jeon(파전)
Pajeon is a Korean traditional pancake(jeon) with scallion as its prominent ingredient, as pa means scallion. Often, other additional ingredients, such as beef, kimchi, or seafood, are added for variety. People love eating Pajeon with Makgeolli(traditional rice wine) on a rainy day. It was believed that this is due to the sound of rain which reminds people of the sound of making pajeon but later it was proven that this is also because of the increase in humidity that lowers blood sugar level and gloomy weather. Pajeon is a flour-based food which increases the blood sugar level and high level of serotonin in pajeon elevates emotion and appetite!
