Recipes Bourbon Apple Filling Yield: 80 portions Prep time: 20 mins
Cook time: 30 mins Total time: 1 hr 20 mins Equipment: 1. Knives for dicing apples 2. Large mixing bowl 3. Measuring utensils (wet and dry) 4. Large wooden spoon to mix ingredients Procedure: 1. Preheat oven to 400 degrees F. 2. Dice apples into cubes no larger than 1 in. 3. In bowl, mix diced apples, cornstarch, sugar, lemon juice, nutmeg, cinnamon, and bourbon until thoroughly combined. 4. Allow mixture to stand for 5 minutes to soften cornstarch. 5. Stir mixture again. 6. Spoon 6 oz. portion into pie shells. 7. Bake in oven for minutes. Ingredients 8 Yield Amount 80 Yield Procedure Diced granny smith apples 6 c. (EP) 60 c. (EP) Dice apples into cubes no larger than 1 in. Corn starch 1/4 c. 2 1/2 c. Place cornstarch into mixing bowl. White sugar 1 c. 10 c. Place sugar into mixing bowl. Ground nutmeg 1/4 tsp. 5 tsp. Place ground nutmeg into mixing bowl. Ground cinnamon 1/2 tsp 1 tbsp., 2 tsp. Place ground cinnamon into mixing bowl. Jim Beam Bourbon 2 tbsp. 1 1/4 c. Pour bourbon into mixing bowl. Lemon juice 2 tsp. ~7 tbsp Mix lemon juice into mixing bowl with cornstarch, diced apples, sugar, nutmeg, cinnamon, and bourbon until thoroughly combined. Notes: Recipe above is only apple pie filling, one portion is equal to filling for one portion of mini pie crust Fresh diced apples are a potentially hazardous food and must be kept cold. Food safety standard: Hold freshly diced apples at degrees Fahrenheit. Immediately put fresh apple into wet mix. Always wash hands and sanitize surfaces, and utensils
