CW2 Kenneth James Good Morning, Everyone. My name is CW2 Ken James and I am the Sr. Food Protection Officer at the Quality Assurance Division at JCCoE. Today I would like to talk with you about the Department of Defense Approved Food Sources. What information the database provides and what may prove to be important many is how to be added to the database.

DoD Approved Food Sources
‘Worldwide Directory of Sanitarily Approved Food Establishments for Armed Forces Procurement’ - official online database - lists *all* food establishments and food distributors approved as sources of subsistence for Armed Forces procurement - Army Regulation (AR) Kandahar, Afghanistan RC NEW EQUIPMENT TRAINING To begin with the DoD Approved Sources is what we refer to as “The Worldwide Directory of Sanitarily Approved Food Establishments for Armed Forces Procurement” It is the official online database for the Department of Defense that shows all commercial establishments that are allowed to provide subsistence to the Department of Defense. The World Wide Directory is covered under Army Regulation TRADOC Soldier Fueling Team

Worldwide Directory The Worldwide Directory is consolidated and published by the U.S. Army Institute of Public Health (AIPH), Aberdeen Proving Ground, Maryland. U.S. Army Veterinary Service personnel perform sanitary audits of establishments listed in this publication. These establishments are subject to sanitary surveillance to ensure continued approval as a source of subsistence for Armed Forces Procurement. Service personnel consist of Veterinarians, Food Safety Officers such as myself, and occasionally Senior Enlisted Soldier. The audit will usually consist of 1 or 2 days to evaluate the facilities food safety program, food defense program, and review establishment processes, and sanitary practices.

Appendix A-Listing Requirements
Under Appendix A you will find the listing requirements that the Department of Defense requires. For example: Fish Canned has to be listed no matter where it comes from.

Becoming Approved Source Suppliers
Suppliers proposing to bid on Armed Forces contracts and whose establishments are not approved as sources of supply must submit written requests for audits signed by management through either local or central purchasing agencies. If your establishment has never been listed in the World Wide Directory, or if it has been listed before but is no longer listed then you must submit written request through a central purchasing agency. Your facility cannot just put in a request to be audited on its own there has to be a purchasing agency in between such as Army Airforce Exchange Service, or Defense Commissary Agency.

Initial Sanitation Audit request - Supplier write a letter requesting initial sanitation audit · owner (or authorized representative) must be signatory · letter addressed to purchasing or contracting agency conducting business - Minimum content requirements of letter · Full name, street address, city, state, zip code, country of processing facility. (include mailing address if different) · Facility point of contact (name, phone, fax, ) · Normal processing facility operating hours · Specific product list furnished (such as bread, rolls, or biscuit) · Caterers – where prepared, military installations to be served and whether contracted · Distributor / Broker – operating in CONUS - exempt
