How Freezer Door Sweating Occurs
When a freezer door is opened, cold air from the freezer mixes with the warm air inside the store. This cold air lowers both the temperature and dew point of the air adjacent to the glass door of the freezer. Once the dew point of this air mixture falls below the temperature of the door, water vapor will condense on the surface of the glass. The door above on the left is a casualty of water vapor condensing on the door. The product inside the door is no longer visible to the customer.

How Destratification Minimizes Door Sweating
The temperature adjacent to the freezer doors will be warmer when an Air-Row fan is running. This higher temperature counteracts the cooling created by the cold air escaping from the freezer when the door is open. The resultant mixed air dew point is higher and the relative humidity is lower.

Air Movement As the cool air escapes from the freezer when the door is open, it is encountering store air that is in motion. The cooler air does not linger adjacent to the glass of the refrigerated case. The air is being pushed down to the floor and dispersed by the air being delivered by the Air- Row fan. How Air Flow Negates Sweating
THE COLD AIR FROM THE FREEZER IS MIXING WITH A HIGHER VOLUME OF STORE AIR AS THE STORE AIR IS NOT STAGNANT BUT IN MOTION. AS THE VOLUME OF AIR INCREASES, THE COOLING EFFECT IS DIMINISHED. THE COOLER AIR WILL NOT LOWER THE TEMPERATURE OR REDUCE THE DEW POINT AS MUCH DUE TO THE HIGH VOLUME OF ENCOUNTERED WARM STORE AIR.
