Anytime Fruit Salad PREP TIME: 10 minutes, SERVINGS: 4-6 (have your parents help you cut the apples and grapes) Ingredients: 1 apple cubed 1 can mandarin oranges (drained) 1 cup grapes halved 1 cup raspberries 6-8oz light vanilla yogurt (you can substitute any different fruit, and different flavors of yogurt are delicious too) DIRECTIONS: Combined all fruit in large bowl, stir in yogurt! Comment: I take this to family events, and everyone can’t believe that it only has yogurt and fruit. It tastes delicious!

Healthified Pumpkin Chocolate Chip Cookies
PREP TIME: 45 minutes (including baking) SERVINGS: 24 INGREDIENTS: 1 cup canned pumpkin (not pumpkin pie mix) 3/4 cup sugar or ½ cup honey 1/2 cup unsweetened applesauce 2 egg 1 Tbs. vanilla 2 cups whole wheat flour 2 tsp. baking powder 2 tsp. cinnamon 1/8 tsp. nutmeg 1/8 tsp. ground cloves 1/2 tsp. salt 1 tsp. baking soda 1 tsp. milk 1 cup chocolate chips DIRECTIONS: Preheat oven to 350 degrees Combine pumpkin, sugar, applesauce, egg and vanilla and mix well (we’ll call this the WET mixture) Combine by whisking: flour, baking powder, cinnamon, nutmeg, cloves and salt in a separate bowl (aka DRY mixture) Dissolve baking soda in milk, then add to WET mixture Gradually add DRY mixture to WET and mix until just combined Fold in chocolate chips Grease cookie sheet and use an ice cream scoop to measure out Bake for minutes until they no longer look wet Let sit on pan for 2 minutes then remove to a wire rack to cool Adapted from: afoodiestaysfit.com

Dad’s Amazing Whole Wheat Bread
My dad makes delicious whole wheat bread, but in mass quantities, I adapted it to make 2 loaves, and fine tuned it a little bit. This bread is amazing! You can even make it Artesian if you want to! Ingredients: 5 1/2-7cups whole wheat flour 2 cups warm water 5 tsp yeast 2 tsp gluten 2 tsp dough enhancer 2 tsp salt 2 Tbsp olive oil ¼ cup sugar or honey egg beaten (optional for brushing across the top to give it a golden shine) ARTESIAN ADAPTION: optional, take out the sugar and add 2 tsp pepper, 3 cloves garlic, 1 tsp parsley, 1 Tbsp dried rosemary or 3 Tbsp fresh) Directions: Combined water, gluten, dough enhancer, salt, olive oil, sugar, and stir. Then add flour and yeast (add last one and half cups of flour slower, until tell you get to the right consistency). Knead for 6 minutes! Then let it raise for minutes and punch down, roll it into two loaves, cut 4 cuts into the top and brush with egg. Then let it raise until you get it as big as you want to and place it in the oven at 375 degrees for 25 minutes! AMAZING!

Healthymade Ranch Dip Ingredients: 1 carton (18 oz) low fat cottage cheese (or greek yogurt) Add ranch mix to taste (Hidden Valley or the generic kind works too) Directions: Mix together for a yummy and healthier ranch dip that KIDS love!
